MACCHERONETTI AL FUNGHETTO
1 lb. small ridged penne pasta
5 oz. raw prosciutto
5 oz. white mushrooms
3/4 pt. heavy cream (may use more if needed)
2 oz. real butter
3 lb. cooked tomato sauce (may use Pomi or prepared marinara)
Parmesan cheese, grated, to taste
1 1/2 lemons
Salt and pepper
Cook the penne pasta al dente. Cut prosciutto into match - like pieces. In a large skillet cook butter, prosciutto and cleaned mushrooms sliced thinly until golden. Then add cream, tomato sauce, Parmesan cheese and salt and pepper. Cook for a few minutes and mix in the penne pasta which has been cooked al dente. Mix well and just before serving, add the grated rind of 1 1/2 lemons being sure you have grated only the yellow part of the lemon. Serve. Serves 6.

Mushroom Pasta Scampi Recipe #15222
8 ounces linguine, uncooked
2 tablespoons olive oil
1 lb fresh mushrooms, white,sliced
1 tablespoon garlic, chopped
1 lb large shrimp, frozen peeled and deveined,thawed
10 ounces fresh spinach, trimmed and torn
1/4 cup parmesan cheese, grated
1/4 teaspoon crushed red pepper flakes
Cook linguine according to package directions.
Drain, reserving 1/2 cup pasta water; set aside.
Meanwhile, heat olive oil in large skillet.
Add mushrooms and garlic; cook and stir about 5 minutes or until tender and mushroom liquid is almost evaporated.
Add shrimp; cover and cook about 5 minutes or until shrimp is almost cooked through.
Stir in spinach and reserved 1/2 cup pasta water.
Cover and cook about 1 minute or until spinach is wilted.
Place pasta in serving bowl; stir in mushroom and shrimp mixtures, Parmesan cheese and red pepper.
Toss to combine.
Season with salt, if desired.

SHRIMP AND SCALLOP SCAMPI OVER
LINGUINI
2 lbs. fresh, peeled and deveined, cooked shrimp
1 1/2 lbs. sm. bay scallops
2 lbs. linguini pasta, cooked and drained
8 tbsp. butter
1 med. onion, chopped
1 tbsp. minced garlic
1 tsp. chopped parsley
1 tsp. crushed red pepper (more or less to taste)
Grated Parmesan or Romano cheese
Cook and drain linguini. Keep warm. Melt butter in large no-stick fry or saucepan. Add onion, saute for about 3 minutes. Add garlic, parsley and crushed red pepper, stir and add scallops, stirring constantly for 3 minutes until scallops are done (will turn from opaque to white).
