You might try melted butter if you are looking for an across the board substitution or if you are looking to make them lighter (as in lower in fat) try applesauce. It is a great substitution but you may have to work at the amount. Start with 3/4 a cup per 1 cup of oil and check your consistency.

Applesauce is a great fat-free substitute. I've also heard to preserve the color of "dark" baked goods, pureed prunes (even from a baby-food jar) work even better. I've never had the courage to try it though.
If it's just a matter of having no vegetable oil in the house, canola oil is a good substitute (for baking, but not frying - it doesn't work well with intense, direct-heat cooking).

Applesauce
I have added an extra egg before and that turned out ok, a little 'thicker' feeling, but I did not loose the moistness that the oil gives.

Both are good for you, each fruit/vegetable has different vitamins. And so as more variety, as better. Vegetables have generally less sugar than fruits.
