Baked Red Snapper With Garlic
2 red snapper fillets, about 6 to 8 ounces each
4 tablespoons butter
1 medium clove garlic, pressed or minced
3 or 4 drops Worcestershire sauce
1/2 teaspoon Creole or Cajun seasoning, or your own favorite seasoning blend, with salt
1/8 teaspoon fresh ground black pepper
1 to 2 teaspoons minced fresh parsley
1 teaspoon snipped fresh or frozen chives, optional
3 to 4 tablespoons plain or seasoned bread crumbs
2 tablespoon freshly grated parmesan cheese, optional
PREPARATION:
Place snapper fillets in a baking dish which has been sprayed with a butter-flavored baking spray.
In a skillet, melt butter with garlic, Worcestershire sauce, Creole seasoning blend, pepper, parsley, and chives, if using.
Cook on low for 2 minutes, just to blend flavors. Brush both sides of fish fillets with the butter and herb mixture. Toss bread crumbs in the remaining butter mixture; sprinkle over the fillets. Bake at 400° for about 12 minutes, depending on thickness of fillets, until fish flakes easily and is no longer translucent.
Serves 2.

Red Snapper Baked with Orange
2 (2 lb) red snapper, cleaned
2 tablespoons butter
1/2 cup chopped parsley
1/8 teaspoon fresh ground pepper
4 oranges, washed and sliced
8 servings
1. Preheat oven to 400° F.
2. Place the fish in a large baking pan.
3. Dot each piece of fish well with butter and sprinkle with parsley and pepper.
4. Lay the orange slices over the fish.
5. Bake for 20 minutes.
6. Reduce heat to 350° F.
7. ,and bake for 20 minutes more or until the fish flakes at the touch of a fork.

Clean red snapper fillet of scales and no bones, leave skin on Pat dry with paper towels and salt and pepper lightly (can substitute Old Bay Seasoning).
Med Hi heat on a fry pan and add 2 Tbls olive oil. Cook fish in oil, skin side down for 2 mins then remove to plate and cover with foil or place in oven (not turned on). Cook fish only on one side at this point.
Leave oil and fish particles in pan and add sliced onion and red bell peppers along with a small pinch of red pepper flakes. Saute for a few minutes until slightly browned (do not over cook).
Add 1 garlic clove pressed thru press or finely chopped.
1/4 cup white wine or vermouth to veggies. Stir to loosen up bits from bottom of the pan.
Add fish on top of the veggies and place lid over the pan to steam the fish for 5 mins turning down heat to med-low.
Melt 1 Tbls butter, 1 Tbls lemon juice and chopped parsley on top of the fish and serve immediately.
This is great with rice and roasted asparagus or stir fried green beans with toasted almond slices.

Very simple recipe for all fish.......Tear a piece of foil and place on counter. Spray with nonstick spray or spread some butter on foil. Place fish filet on foil. Sprinkle with dill weed and lemon juice. Put a tad of butter on top, then place a lemon slice on top of the butter. Seal the foil. Bake in oven @ 325 deg celcius for 15-20 min. Yum!

Clean fish with lemon or lime, sprinkle with fish seasoning, pepper, thyme, parsley. Lightly cover with flour, fry until brown on both sides. Remove from pan. Saute half onion which has been previous chopped, put some brown vinegar in with onions after sauteed, add fish and turn off cooker.

Heat a skillet up with some butter, then dip your fish in a ziplock bag of flower and place them on the skillet. Its simple but they taste great when their done.

Steam the snapper with tomato, onions, sewwt peppers, pimentos, celery, chive in garlic butter.
