I have the same problem with store bought cake mixes, but not cakes from scratch. and yes, don't under beat it, the eggs need to be beaten alot to fluff it up!

Hmm....give that cake to your kids on the school bus.

Here's a homemade one you can try and it's really good!

Sue B's Chocolate Cake
.
3/4 cup cocoa powder
3/4 cup boiling water
1 cup buttermilk
1 cup canola oil
4 large eggs
1 teaspoon vanilla
2 cups sugar
2 cups flour
1/2 teaspoon salt
2 teaspoons baking soda
2 9 inch rounds

1. Mix cocoa and boiling water.
2. Mix buttermilk, oil, eggs and vanilla together.
3. Mix dry ingredients together.
4. Mix dry ingredients into buttermilk/oil mixture.
5. Mix in cocoa.
6. Bake at 350° in two greased and floured and parchment lined 9-inch round pans.
7. Bake until tester comes out clean.

I´ve never had this problem. Make sure you read the directions thoroughly. If you live at high altitude but cook it according to the regular directions, that could cause your cake to come out flat.

Make sure you are using the correct size pan. The problem might be that you aren't mixing it correctly, or mixing it enough rather. Make sure you are using jumbo eggs (at room temperature is best) and beating it enough according to the package. The more you beat the mix the larger and fluffier it gets.

the pan is too big, too much of something which keeps it from riseing, or you are at a high altitude and u did not make the proper adjustments. cake mixs are usually fools proof

Are you putting it into the right size pan according to the box? I don't have any trouble with mixes.

I use Duncan Hines mixes or make them from scratch...they always turn out good.
