Police officers are city cops and usually only stay within the city limits. Usually. Sheriffs patrol the whole county and usually bust people where the town isn't big enough to have it's own police dept.

Technically, a Sheriff is an elected political position. I assume you meant to say Sheriff's Deputy. These are the law enforcement officers acting under the authority of the Sheriff. As stated, a Deputy (in general) is a law enforcement officer county-wide. A police officer is a law enforcement officer city-wide. Both are dangerous jobs. Both have the same arrest powers. This also depends on the area. Some areas have county-wide police with very little presence with regards to a Sheriff. Others are the opposite. Either way, the job is the same. People commit crimes in any and all areas. If you're afraid of not being able to handle the job, then do not become either one. The job isn't for everyone.

a sheriff is elected and is the head of the sheriff department which normally also operate the jail. In some counties they also have patrol, in some counties they do not do patrol but have a county police department. ( it will all depend on how your county has set up thier police department)
A deputy sheriff is a officer hired by the sheriff ( or by the administration of the sheriff office) he will work either in the jail or on patrol in the county.
A police officer is employed by either a city, county or state police agency.
Both have police powers within thier jurisidiction.

In CA, legally nothing. Both are authorized under 830.1 (deputies are named first). Police Officers usually work for a specific municipality. Their chain of command ends with the city manager (believe it or not, it is not the chief). A Deputy works in unincorporated areas. Their chain of command ends with the Sheriff. (a deputy is a direct representative of the Sheriff, a the police officer does not represent the chief).
Sheriff's also serve civil process, guard the courts and jails, and do a few other things cops usually don't

A Sheriff is a police officer. A Sheriff is over a county and within the county you have city police departments. Larger cities also have Constables and Marshals in addition to their police department which takes care of smaller duties such as evictions, serve warrants etc etc. but they are all police officers.
