Chicken Salad in Whole-Wheat Bread Bowl
I got this recipe from my WW's news letter. It sounded good so I thought i'd share. The points value is 5. Can be prepared up to 24 hours in advance. (The recipe calls for high- fiber rolls but when trying to post recipe it wouldn't reconize them.)
1 lb boneless skinless chicken breasts
1/3 cup fat-free mayonnaise
1/3 cup pimento pepper or roasted red peppers, diced
2 medium celery ribs, chopped
2 tablespoons parsley, chopped
2 teaspoons Dijon mustard
1/2 teaspoon dried oregano
1/4 teaspoon black pepper, ground
4 (2 ounce) whole-wheat rolls, tops removed and centers pressed down to create bowls
4 servings
1. Place chicken in a saucepan and pour enough water over to cover. Set pan over medium-high heat and bring to a boil. Reduce heat to medium and simmer until chicken is cooked through, 10 minutes. Drain, transfer chicken to a cutting board and cut into 2-inch (5 cm) pieces.
2. Meanwhile, in a large bowl, mix together mayonnaise, red peppers, celery, parsley, mustard, oregano and black pepper. Add chicken and mix well.
3. Spoon mixture into prepared rolls. Yields 1/2 cup chicken salad per roll.

Not sure I understand the question. Use whole wheat bread or tortillas, and fill with preferred fillings, including vegies.
