Here's the definition of 'china'.
Main Entry: chi·na
Pronunciation: 'chI-n&
Function: noun
Etymology: Persian chInI Chinese porcelain
1 : PORCELAIN; also : vitreous porcelain wares (as dishes, vases, or ornaments) for domestic use
2 : earthenware or porcelain tableware
As you can see, china refers to chinese porcelain, not best plates.
I am a chinese, and as far as chinese are concerned, they do not really have best plates. However, some rich and influential chinese families dine in gold or silver plates. Some even have their meals on plates adorned with art by famous chinese painters.

"Dinnerware or dishware is often made of porcelain china, although glass and durable plastics such as Melamine are also often used.
Fine dinnerware is often referred to as commonly as china fine china or bone china."
They probably use a word in their language that means fine dinnerware. Ours happens to translate to the name of their country, so what?

We don't have a name for a set of best plates. If we do, we just call them our best plates.
