Most wines are made naturally by crushing the grapes and then steeping the juice in the skins for a time to extract color and tannins. Then the juice ferments, which is the growth of yeast in the juice, which consumes most of the sugar and converting that to alcohol. This can take a few months to complete.

Once fermentation is done, the wine is clarified. The most natural technique is called racking, where the wine is pumped from barrel to barrel, allowed to settle, and then pumped again, leaving the sediment behind.

The wines are usually aged in wooden barrels for months to years, and then bottled.

From grapes? You rinse the grapes off, destem and crush them. Let the juice ferment from the active yeast in the grape. Transfer it off the sediment a few times over the course of a year, allowing it to clear. Use a sulphite to stabilize it. Bottle it.
