My guess would be that they don't know what they're talking about, and are just copying someone who doesn't know what they're talking about. Or they may have misheard it.

They don't know better. "Fettucino" would be one of that type of noodle; however, Fettucino is an Italian name. It could be a surname or a Christian name.

They may be speaking of only "one" fettucino.

Just like hair. "One hair" is cappelo.
