I'm fed up with my poxy blunt knives.
Would need to be available to buy or deliver in the UK...
Any ideas?

I'm a chef. I use global knives both at wor kand at home.

However, it is improtant to find a knife that suits you - go into a store where you can handle them, they should feel 'balanced' in your hand. Take the handle like you would someone's hand if you were offering a firm, businesslike handshake (none of this fingertip girly rubbish). Then loosen your grip a little, does the knife 'balance'?

If you go to a professional chef suppliers they will advise you on the best knives for you and the correct way to care for them so that you prolong their lives and their sharpness. A medium sized global knife costs around £40 so you should see it as a life time investment.

My personal choice is Global knives, however, the price, name, etc does not mean a thing. You need to find a knife that feels comfortable in your hand. We can recommend every knife in the world, but you might pick it up and say, 'Ugh! Too Heavy!' or too light or uncomfortable or awkward...etc.

Go out shopping. Any kind of good cookware store will let you "test drive" a quality knife before you buy it. Don't order online unless you've held it in your hand. What's the sense in buying a $100+ knife if you get it home in your hand and hate it?

I had Sabatier knives for years, but didn't look after them properly (no-one told me you have to sharpen them - you should sharpen knives every 4th use!!) so they are beyond help now!

I now have Pampered Chef knives - each has it's own case with a built-in sharpening mechanism! They come with a life-time warranty and I will never have to buy another sharp knife again.

I just bought an Eclipse knife set from eBay for 29.00 was delivered in 2 days, wickedly sharp!
