It's the scientific study of human behaviour. Psychologists observe behaviours because it's easier than guessing what people are thinking. The information is shared amongst the community through scientific journals, so that the information can be built on by people adding to and analysing what's been said. Someone comes up with a question, and then thinks of a way to study it by breaking it down into measurable units. For instance, does listening to music make me drive faster? In order to test this you could play different types of music (measured by their bps) over a number of trials (hopefully 30 or more) under the same conditions. You could then start to see if there's an effect on the speed of the car when the music changes. The questions are endless.......it's just good when they have an impact on the real world, and the way we understand it.
