Aside from stealing one of her other rings (how many rings do most un-engaged/married women wear on their ring fingers?), you might consider taking her on a random shopping trip. Call it a birthday, christmas present, say you want to take her on a romantic date (she might think you're going to propose then, but don't so she forgets about it for a little while...) and you want her to get a new outfit for it. Tell her you want her to be sure she has shoes to match, and then get necklaces, bracelets, anything that looks good, and rings.
Make her look at some rings that will look nice with the outfit, or whatever she may be wearing for an upcoming special occasion. Don't be suspicious but get her into that store.
Ask the jeweler to help see what size ring she wears and then take the sizers and help her with them. Be a silly man and pretend you think all rings go on the ring finger. When she tells you wrong finger, or other hand, you'll already have a good guess based on the sizer you slipped on her finger, if it's big or small, adjust half a size and you're set.

Coming from my perspecitve, these would all work on me, and I would be none the wiser!
I tend to put hand lotion on my hands a lot, and i have my boyfriend (or whoever is with me) hold my rings so they don't get greasy. If your girlfriend does the same thing, you could put the ring on your finger and see where it fits you at, and get the size out of it that way. If you make a joke out of it, she most likely won't think twice about it.
I also tend to leave my jewelry sitting out a lot, and have the tendency to misplace it. If your girlfriend does the same, you can discretely borrow a ring from her and get the size that way. When you are done, put it back in a spot where she's left it in the past, and then let her find it and play it off as forgetfulness.
A third option is to have a roommate or friend try one of her rings on and then she can help you determine the size that your girlfriend needs.

You can adjust a ring by one size larger or one size smaller (ask any jeweler). You can find any person working in a mall (that you don't know) who appears to be her size and weight your girl is, and as long as they are working behind the counter, and it's a quiet day and no one else is around, you can go up to them and tell them your situation and ask what size ring would be appropriate. They will laugh, sure, but it's ok.
In years past people used to go steady first, exchange school rings first before you get engaged, so that's how your question was solved.

When she falls asleep, get a piece of thread and measure the size of her finger with it. Then when you go to the store you can put the same piece of thread around the ring and see what size she has.
You can also ask her friends.
You can tell her that you are going to buy her a ring, so you'll go to a jewelry store with her and look at some rings with her, so you'll find out her size. Then tell her that you are going to buy it for her and go home. Then go back and buy an engagement ring.

My friends husband did this. He took her ring and put it on his finger and then looked to see how far it came up on his finger. It was a perfect fit. This only works if you have the ring they wear on the exact finger of the wedding ring. You can also get a ring that is larger than her finger will be that will be sized ask the jewler. You can ask her fathers permision and have her mother help you get that info secretly. Ask advice from a professional jewler. I am sure they deal with this all the time. That does not mean you have to buy from them just act like you might buy from them. Also there are ring sizers you can get. You may be able to do it while she is sleeping ask a jewler for advice.

Another trick is to get her to mess around with some costume jewelry at a store or at a place and make note of what fits and what size it is. Just play. You just have to be really sneaky. Go to a really casual place spontaneously, but not really. Try on rings that she tries on her ring finger and see where they go on your hand.
Or just get a ring that can be sized or a basic one that can be re-made. One of my friends got a basic one because her husband wanted to be traditional and supprise her They designed it further afterwards to be really fancy with family diamonds. It was great.
You can also use a sister or a tusted friend to sneak an answer for you. Just be sure you are really careful not to get her to find out. I hint to my boyfriend all the time and tell him my size. He just thinks I am a jurk.

You could take her to the store and tell her that you need her to help you find a ring for your niece's birthday. Pick out a couple of birthstone rings and ask her to try them on so that you can see how they look on her finger. Then, after you've found out her size, tell her that you'll just put some money in a card and tell your niece to pick out whatever she wants. Of course, this works ONLY if you actually have a niece. Make sure whoever you use lives far away, so that there's no possibility of the two of them bumping into each other. <*)))><

The way I got my wife's was I said that I wanted to have something of her with me all day one day. We exchanged rings, I'm off to the jewellers and she's not wish until I slip a perfectly sized ring on her finger!
Make sure it's from the right finger though. Don't ask for a ring, point to a ring.

does she wear a ring on the same finger but other hand? if she does or end another ring grab it, generally the wedding finger is the smallest other then your little last fingers. take this as an idea, get a ring that size and make sure that it can be resized without disruting the stones then its looks like you tryed as it is a close size, she will be very inpressed.

Can you get your hands on her jewelry box? If so, you can take an old ring in, and it can be measured to give you her size.
Otherwise, the standard ring comes in a size 7--which will fit most women of average hand size. Any jewelry store--even Wal-Mart and K-Mart will size your ring for free if it doesn't fit .
