Well Jason,
If you are not including the earliest uses of alcohol (making water potable, anesthesia in surgery, disinfecting wounds, preserving food) and you are only referring to alcohols bad rap, then I would have to say;
1). We would probably be a little more uptight.
2). Murders / Suicides / Rapes would be much lower.
3). Ugly people would probably never get laid.
4). Good looking people would be lousier lays.
5). Smokers would take A LOT more heat, (Driving while smoking... Hey, someones got to pay those fines!).
6). We would have "Milk Bars" and milk would be taxed up the yin-yang.
7). We would have to blame ourselves for our children's failures!
AND LASTLY, Yes, we would still have wars. You said no Alcohol, you didn't say "No Male Testosterone!"

Would the human race still be here?
Alcohol puries water and preserves fruit and grain for the winter in the foremor wine and beer, giving calories and vitamins to people who had no fresh meat of vegetables for the winter months. How many would have died without it? Would society have survived?
It is only very recently that it was understood how to purify drinking water and milk. Before then thousands died from drinking polluted water. Those that drank beer lived; children drank beer for breakfast lunch and dinner and there were breweries in schools.
Alcohol sterilises wounds, drugged patients who needed operations in the days before anaesthetics.
It is hard to think how we'd have got where we are without alcohol. Alcohol predates history; there is a good arguament for saying that human life depends on it.
I know there is a very anti alcohol movement in the US and they teach anti alcohol propaganda in some US colleges, but history tells a different story.

Oh boy what a question, or should I say statement. You anti-alcohol people kill me with the way you try to get your point across.
OK on with the ridicules question.
Adapted how? Most likely we would not have due to the fact alcohol is/was used to sterilize medical equipment. The antiseptic properties of it have been invaluable.
Wars? other then fights during Prohibition I know of no real wars that where due to boozing it up.
Soldiers during a time of war drank to forget what they did, some long after still did.
Toasts where made after wars where won.
If it where not for booze, ugly people would not get laid.

Alcohol was not invented as it occurs in nature. Yeasts eat sugars and create alcohol.
If not for alcohol, man probably would have found some other substitute.

if alcohol was never invented, people would be healthier, there would be no alcohol related illness, no drink driving, less unwanted pregnancies and just generally a healthier, better behaved society.

well, right now I am using the tequila cure for a flu antibiotics won't cure, but I know this will. So, without alcohol, I know a few people who would be dead
