An easy cucumber sauce recipe for fish or salmon patties.
INGREDIENTS:
* 3/4 cup sour cream
* 1 tablespoon finely minced green onion, tops only
* 1/2 cup grated cucumber
* 1 teaspoon salt
* 1 tablespoon fresh lemon juice
* dash ground cayenne pepper
PREPARATION:
Combine all ingredients; chill. Serve with cooked fish or salmon patties.
Makes about 1 cup.
Cucumbers with sour cream and dill.
INGREDIENTS:
* 2 to 3 cucumbers, thinly sliced
* 1/3 cup sour cream
* 1 tablespoon vinegar
* pepper
* 1 1/2 tablespoons fresh chopped dill or 1 1/2 teaspoons dried dill
PREPARATION:
Arrange cucumber slices in a serving bowl, sprinkling layers with salt. Place a saucer or other weight on cucumbers to weigh down. Cover and let stand for several hours. Pour off cucumber juices. Combine sour cream, vinegar, pepper to taste, and chopped dill; add to cucumbers.

Sour Cream Cucumber Salad
3 medium cucumbers, peeled and thinly sliced
1/2 teaspoon salt
1/2 cup finely chopped green onions
1 tablespoon white vinegar
Dash white pepper
1/4 cup sour cream

In a bowl, combine the sour cream, vinegar, sugar, garlic powder, dill and salt. Add cucumbers and onion; toss to coat. Cover and refrigerate for at least 1 hour. Serve with a slotted spoon. Yield: 6 servings.
Dilly Cucumber Salad
1 cup sugar
1 cup white vinegar
1/2 cup water
1 tablespoon snipped fresh dill OR 1 teaspoon dill weed
2 teaspoons salt
4 medium cucumbers, thinly sliced
1/3 cup sour cream
In a saucepan, combine the sugar, vinegar, water, dill and salt. Bring to a boil over medium heat. Remove from the heat. Place cucumbers in a large bowl. Pour vinegar mixture over and toss to coat. Cover and refrigerate overnight.
Drain and discard vinegar mixture. Stir sour cream into cucumbers. Cover and refrigerate until serving. Yield: 6-8 servings.

sliced smoked turkey or ham, optional
PREPARATION:
Combine minced cucumber, mayonnaise, sour cream, and salt; blend well.
Spread cucumber spread on crackers; top with thin slices of cucumber and bite-size slices of turkey or ham, if desired.
Quick Sour Cream Cucumbers
3 medium cucumbers, peeled and sliced thinly
1 cup sour cream
1 teaspoon black pepper
In medium bowl add peeled and sliced cucumbers.
Add sour cream and stir gently until cucumbers are well coated.
Sprinkle with black pepper and refrigerate until ready to serve.
Cucumbers in Sour Cream
1/2 cup sour cream
1 tablespoon sugar
1 tablespoon lemon juice
1 teaspoon salt
1 teaspoon sesame seeds (optional)
salt and pepper, to taste
2 cucumbers (sliced thin)
1 small onion (sliced)
Mix first six ingredients together and pour over the combined cucumber and onion slices. Stir gently.
Chill before serving.
