Depends on the kind of vacation you want to have. If you'd do it in the cheapest way possible, you'd need at least 1,000 to 1,500 Euros. If you'd vacation comfortably and need to buy a lot of stuff, you'll need 2,500 to 3,500 Euros. If you'd like to vacation in style, you'd need 4,000 Euros or above. :)

How much do you like to eat & drink on vacation? What type of place do you plan on staying? Do you plan on going inside of attractions?
Many Churches are free in Rome, and simply request a small donation. 1 Euro at each church is typically good. The major attractions are free as well - St. Peter's, The Forum, The Pantheon, The Spanish Steps, The Trevi Fountain, etc. It *will* cost you to go inside the vatican museum/sistine chapel and to go inside the Colisseum. I think it's around 10-15Euro Per Person each place.
We walked everywhere in Rome. No need for Taxis or even the subway if you have a map, a guide book, and a sense of adventure. Being in passable shape helps, too.
For food, plan on spending 20-25Euro per person for dinner. It's bad form to go to a restaurant for dinner and order only one course. You also don't drink table water, you order bottled. The good thing is, a carafe of house wine, that is usually excellent, is very inexpensive.
You can find breakfast & lunch for 5-10Euro per person. Check out the 'bars' for lunch items - they aren't bars like in the US - they are more like delis/mini markets. Avoid the food vendors at the major tourist locations - the food is usually dried out and overpriced.
A BIG money saver is to buy a plastic water bottle your first day and keep refilling it with fountain water. Clean fountains are free and located all over Rome. We probably saved 30 Euro doing this since the two of us probably would have bought at least one bottle a day each.
Good luck and have fun!
