I met a girl at a bar and she was buying me drinks, kissing on me, and at the end of the night she text me! I text her back the next day to set up a date and told her I would call during the week to set a for sure date. I text her a couple days later and no response, why?

how about calling her - txting is ok - but hardly making you seem like much of a man. A girl wants a man not a boy and txt after a while can be seen by some as childish - but to be serious just move on.

I think that maybe at that time, at the bar, she was just bored and all that things that she did with you? The kissing, buying the drinks... was just a way of flirting with you... I don't think she was really interested.
