It depends on the skill level of each fighter obviously. maybe the guy with the stick would knock the guys knife out of his hand, take it, and then scalp him.

it really had to depend on the situation, a knife could be good for short ranges but if you're fighting someone with a stick and although the knife can do more damage, the stick has the upperhand advantage because you can use the stick to fight in all ranges. those that study martial arts know what the different ranges are good for, like in any art you have different ranges, in the art of Kali you have the long, medium and short ranges.
if you study Filipino (forgive me if i spelled it wrong) martial arts, you will definately learn to fight with both a stick, a dagger (or knife) and empty hand. All are good for it's different uses. So once again it all depends on the situation, and how experience the person is. I've seen people sparr in the art of Kali and yeah, each has it's advantages. There are so many ways to do a disarm but if not trained you can get hurt also.

Depend.
If it's a surprise situtation, the knife will win.
If it's square off and someone have disarming knowledge, that person would win.
If it's square off, it depend a lot on weapons.
However a bokken would murder both of them. bokken hit HARD, I'm almost certainly harder than a stick and it CAN cut if you use it as a sword correctly. So bokken would be my first choice.
If I have to pick one, I would go with knife. It's much less risky to disarm someone without any training who have stick than if they have a knife. So I can disarm the person and use stick while have a knife as a back up.
However keep in mind, your own weapon could easily work against you if you have no idea what you're doing.

It depends on the size of the knife and the "stick." If it was a bao against a puny little Swiss Army knife then the bao would win. It also depends on the people in the fight. A kid with a butcher knife vs an adult with a stick... the adult would probably win by just kicking the kid in the face. So... it really depends on the people and the sizing of the "weapons."

All things being equal, meaning skill wise, I'd actually say the stick fighter. Any stick you'd fight with would probably be long and sturdy. The average knife, although sturdy, is rather short. The stick guy could wallup knife guy from farther away.

a knife can be extremely deadly, but the good thing about a stick is the distance, the person has to get into at least trapping range in order to use a knife.. where as with stick you only have to be in striking range to use it, because of the length... escrima can teach you how to use a stick to subdue an armed attacker... and to use a stick or any long object (baseball bat, golf club, etc.. ) to your advantage in a defense situation...

That all depends on the situation, and the skill level of the person wielding the weapon.
In the Philippines, there are entire martial art forms dedicated to the art of fighting with sticks; usually with one in each hand. The sticks they use aren't exactly your average tree branch however; they are finely balaced, and with enough momentum are capable of breaking bones.
In your average situation, the guy with the knife would probably win if he got in a quick attack, unless the other guy had a big stick and was prepared to fight (ex: a baseball bat)

That depends, I'd trade a knife for a staff any day. If it's a small twig stick then I'd go for the knife. If it's a 5 ft long staff about 1.34 inches in circumfrence then I'd go for the staff, even if the knife was a throwing knife.

I think there's advantage and dis-advantage in holding a knife or a stick.
When you holding a knife or stick..
some advantage are:
1. you have increased range of attacks.
2. you have mentally benefited (depends on your opponents).
3. you can damage your opponent with just one shot.
some dis-advantage are:
1. When you kick or punch(Standin fight), it disturbes you.
For example, if you holding a knife or stick, you can not use One-Two in Boxing, right?
2. It distubes you when you use ground tech.(Grappleing tech.)
can you tackle your opponent and take down, holding something?
For those reason, Sometimes, Emptied Hand person defeated person who holdin a weapon.
Actually, If you trained in Standing Fight(Boxing, Karate, TKD) professionaly,
your hand and feet are best weapon you have, you don't need any more, except Gun.
However, I have witnessed a person(female) who learned Gum-do(How to use sword, it's japanese thing) defeated 5 guys with just mere Stick in sparring.
So, I bet on some one with a knife or a stick.

Depends on how big the stick is. If it's a Bo (staff) then I pick stick, If the stick and knife are the same size then I pick knife.
