Sticky rice with Mango. Amazingly good. The mango has the consistency of ripe peach, but has a tarter and more exotic taste, and contrasts in texture and flavor with the sweet, sticky pudding like rice.

You just cook short grain rice in water with some sugar and coconut cream added. Serve with fresh ripe mango, and a little lemon or lime juice if you have it (optional). Coconut cream can be bought canned.

Depends on what you like. You could try a cake. White with strawberry frosting. Or chocolate with vanilla frosting. There are lots of possibilites. If you would like something cold try a milkshake. Strawberry and banana milkshakes are good. Slice two bananas, slice about 10 strawberries, two scoops of ice cream, a little bit of milk, put it in a blender, and blend till smooth. Put in some glasses and serve.

Strawberry Short cake. Buy frozen strawberries and the short cakes that are usually in the produce section or ask where they are. They come in a pkg of 6. Serve with vanilla ice cream. My easiest and favorite.

AMBROSIA MOLD
1 can (8 ounces) crushed pineapple in juice, undrained
2 cups boiling hot water
1 package (8-serving size) orange flavor Jello
1 3/4 cups Cool Whip
1 can (11 ounces) mandarin orange segments, drained
1 1/2 cups miniature marshmallows
1/2 cup coconut
Drain pineapple, reserving liquid. Add cold water to liquid to measure 1 cup. Stir boiling water into jello in large bowl until completely dissolved. Stir in measured liquid. (1 cup) Refrigerate 1 1/4 hours or until slightly thickened. Stir in cool whip with wire whisk until smooth. Refrigerate 10 minutes or until mixture will mound. Stir in oranges, pineapple, marshmallows and coconut. Spoon into 6-cup mold. Refrigerate 4 hours or until firm. Unmold and serve.

GOODIE BARS
1/4 stick butter - melted
1 cup graham cracker crumbs
1 cup shredded coconut
1 cup chocolate chips
1 cup chopped walnuts
1 can condensed milk
Melt butter and mix with graham cracker crumbs; press into ungreased 9 x 13 inch baking pan. Spread coconut , then chips, then walnuts. Pour condensed milk on top and bake at 350 for 30 minutes. Cool and cut into squares.
