my mother would make a pot roast every christmas using round. ingredients - 2kgs round, salt to taste, 1kg finely sliced onions, quarter kg finely chopped ginger,quarter kg finely chopped garlic,one and a half cup oil, a tsp of whole black pepper, half a tsp of cloves,1 to 2 heaped tsps of chilli powder,2 litres water.

method - put all the ingredients in a big pot on high flame, bring to a boil and reduce the flame. let it simmer' occasionally turn the round piece around for even cooking.once the water reduces check with a knife if meat is tender otherwise add some more water and cook a little longer.once the meat is tender and the water has reduced you have two options one to let the roast fry in the oil in the pot turning it about for a nice brown colour or else remove the meat on a baking tray and put it in pre heated oven 150 degrees celcius for about 20 minutes. you could peel and add some potatoes to the pot once you realise the meat is almost done.
serve - mom would slice the meat and then fry it in the gravy that was made while cooking the roast YUM!!!!! TRY IT YOU MIGHT JUST LIKE IT MY HUSBAND AND DAUGHTER AND ALL THE GUESTS AT CHRISTMAS JUST LOVE IT. you may reduce the chilli if you do not like your food to hot,i am from india hence the extra chilli

Roast
Ingredients.
2 Kgs boneless meat,cut in 8 equal size pieces
300 gms chopped onions
200 gms chopped tomatoes
Cardamons Big Black Ones 6 Nos.
Cardamons Green 8 Nos
Cinnamon Sticks 5 sticks I inch long
Black Pepper 20 Nos.
Dried Red Chilies 5 Nos.
Oil 150 ml
Salt to taste
Method
Heat oil in a pan,add the chopped onions let them turn a golden brown,add the chopped tomatoes till they get into a paste form and begin to fry in the oil with the onions,now add all the other ingredients mentioned and stir fry for 4 minutes.Now add the meat and fry in the golden brown paste till you see the meat changing colour to a dark golden fried brown. Add 400 ml of water and pressure cook for 20 minutes on slow flame.Open the pan pierce with a knife or fork to see if meat is tender.If done then dry the remaining water in the pan on high flame stiring continuously. Serve hot with bread

Pretty much any roast all you have to do is lightly flour and brown in a little oil on all sides. Fill pan with water to cover roast. Add garlic and onions. Boil a few hours until it starts to fall apart. 30 minutes before its ready add veggies like potatoes, carrot, corn, broccoli, whatever you like. When its all done, drain and reserve the broth. Mix a few tablespoons of flour in cold water and add to the broth. Cook until it makes gravy. Be sure to serve brown and serve rolls with it!
A friend of mine swears by the bake in bag kits. Never tried them but I hear they make a great and tender roast. Good luck!

BOTTOM ROUND ROAST

1 (2-3 lb.) bottom round beef roast
1 tbsp. sugar
Salt and pepper to taste
6-8 beef bouillon cubes
8 oz. water
6 oz. Coke

Wash, dry roast. Rub with sugar. Salt and pepper to taste.
Place 2 pieces heavy foil in pan. Place roast within. Pour Coke over. Place 4-5 bouillon cubes and water around roast.

Place small piece foil over roast. Wrap roast loosely with 2 pieces foil.

Bake at 350 degrees. Place pan with roast onto roasting pan which is filled with water. Cook 1-2 hours per pound, turning roast in broth several times, until roast sticks tender with fork.


GRAVY:

Mix:

2-3 bouillon cubes
2-3 c. water

Bring to boil to melt thoroughly. Pour broth from roast into amount of gravy needed. Mix 2 tablespoons flour with small amount water until smooth. Pour into broth mixture. Use additional flour mixture to make gravy thick as wanted.
Slice roast across grain. Keep roast in broth or bouillon to keep from drying out.

For gravy: May need to use all roast broth to make. If so, place sliced roast in bouillon mix.
