And you're not far off, actually! I've been a prof for over 20 years, and it's understood in the business that when you give a final, you have two basic choices:

1. Work hard to make an intelligent multiple choice/short answer test that won't take much time to grade; or

2. Slap down some broad essay questions (like those you've listed) and then spend a long time laboring over each paper.
