Allergy is a weird thing; you could have hypersensitivity to seafood all the sudden without any explanation. Most common symptoms of food allergies is itchy red skin, rashes, swelling/edema of the lips, swelling to the hands and pain in the stomach, vomiting, nausea, diarrhea. Since you are able to ask this question, I am assuming you are not in a medical emergency (anaphylactic shock). So do not worry... the symptoms usually goes away within an hour. If not, take some OTC antihistamines.
Note: you should see an allergist to diagnose to find out the cause.

It is very possible that you've developed an allergy to tuna.
Like someone said, allergies are a weird thing. Your body at some point just decides "HEY I DON'T LIKE THIS" and your immune system starts attacking. You can't have an allergy unless you've been exposed to something previously.
If you aren't having tightness in your throat or difficulty breathing, and if you can take Benadryl, I would suggest taking Benadryl 25-50 mg** by mouth every 4-6 hours until the redness is gone (and for 24 hours after the redness is gone to prevent rebound). If you're having throat tightness and/or trouble breathing then get to the ER.
Food allergies can cause rashes, stomach aches, headaches and breathing problems. The Benadryl will help stop the allergic reaction.
Then I suggest you get in to see your doctor for testing to see if you are, indeed, allergic to tuna.
**Remember, Benadryl can make you drowsy and sleepy, so use caution when driving or operating machines until you know how you'll react.

Get tested for allergies. You might want to check for allergies to MSG too, since you don't seem to react to other kinds of fish.
