why not try to add them into a juice?it's refreshing.
2 stalks of celery
1/2 a cucumber
1 green apple
and top it up with lemon.
this bev is good for ur skin and oso used for detox.

How about tzatziki?

1 English Cucumber, yoghurt, garlic, olive oil, salt, pepper, lemon juice, parsley

Grate cucumber finely and allow to drain in
a colander.
Mix cucumber with 2-3 crushed cloves of garlic and yoghurt in a bowl. Add 2 tablespoons
of olive oil, 1 tablespoon lemon juice and salt and pepper to taste. Garnish with parsley. Allow to chill for 3 hours. Serve as a dip or
condiment to fish or meat dishes. My favorite
dish is stuffed green peppers (Greek way) served with tzatziki on the side.

Another suggestion is to take a pita bread and fill it with falafel and tzatziki.

Cucumbers are my abolute FAVORITE food! I could sing all day of cucumber dreams. Regardless, there are a million and one cucumber recipes! make a simple sandwhich of them with basil and almonds and olive oil on sourdough bread MMM! Also, roll some cucumber sushi! Or, go greek and marinate cucumber slices with tomato chunks and red onion slices in a vinagrette for a simple salad.
YUM.

Cucumbers are great in sushi and sandwiches.
But the best way (and fastest) is to slice cucumbers, and tomatoes up. Put into a bowl together mix with vingar. Then enjoy!
(Don't forget to add any spices you like to the cucumbers/tomatoes!)

You could try these:

CUCUMBERS IN SOUR CREAM
2 c. peeled and sliced cucumbers
1/2 tsp. Salt
1/2 c. sour cream
2 tsp. Vinegar
1/2 tsp. Sugar
2 tsp. instant minced onion
1/2 tsp. dill weed
Dash of cayenne pepper
Cracked black pepper

Place cucumber slices in bowl. Sprinkle with salt and cover with cold water. Refrigerate 30 minutes. Drain well, combine remaining ingredients and toss lightly. Chill at least 1 hour before serving.




Cucumber dip recipe with cream cheese, grated onion and chopped cucumber.
INGREDIENTS:
* 1 small package (3 ounces) cream cheese
* 2 tablespoons finely chopped onion
* 1/2 cup finely chopped cucumber
* half-and-half
* salt
* thinly sliced unpeeled cucumber

PREPARATION:
Combine cream cheese, onion, and finely chopped cucumber. Add half-and-half until mixture is dipping consistency. Add salt to taste. Garnish with cucumber slices.
Makes about 1 cup of dip.

Cucumber Party Ryes.... This appetizer/snack is the best!!

1 loaf Peppridge Farm cocktail rye bread
8 oz. cream cheese softened
3 tbls miracle whip
1 oz. pkg. hidden valley ranch dressing mix
2 cucumbers peeled and sliced
dill weed

Mix cream cheese, miracle whip and ranch dressing together until well blended. Spread on cocktail rye bread, top with a slice of cucumber, and sprinkle with dill weed.

BREAD & BUTTER PICKLES

25 to 30 medium sized cucumbers
8 large white onions
2 large sweet peppers
1/2 cup salt (not iodized)
5 cups cider vinegar
5 cups sugar
2 Tablespoons mustard seeds
1 teaspoon turmeric
1/2 teaspoon cloves (whole)

Wash cukes and slice. Chop onions and peppers. Combine with cukes and salt; let stand 3 hours and drain.

Combine vinegar, sugar and spices in large preserving pot and bring to a boil. Add drained cukes. Heat thoroughly, but do NOT boil.

Pack while hot into sterilized jars and seal at once.

My husband's favorite sandwich is a cucumber and corned beef sandwich with mustard. We use the canned Hormel Corned Beef and slice the cucumber nice and thin.

have you ever tried cucumber sandwiches?cut the crusts off of two slices of bread. spread one slice with softened cream cheese.place peeled,sliced cucumbers on the cream cheese.cover this with the other slice of bread. cut at an angle.then cut at an angle from the other direction, like a criss-cross.place finger sandwiches in plate,serve cold.yumm.
