As soon as you are done cooking them drop them in COLD (ice) water. The egg will shrink and the shell will not.

After boiling the egg, place under cold running water for a minute. This ensures proper separation of the egg white from the shell. Then, by tapping gently yet firmly on one side, and then rolling the egg on a hard surface, crack the shell evenly around the middle. Peel the shell, and voila! One perfect boiled egg.

G'day Paul,
Thank you for your question.
There are two ways to make hard boiled eggs that are easily peeled. The first is to use older eggs a week to 10 days older. Apparently, their PH is different.
The second is to place them in cold water immediately after boiling them or run cold water over them before peeling.
I have attached some sources for additional reference.
Good luck.
Regards

One of the easiest ways to peel a hard boiled egg is to peel it under running water..First you need to roll the egg on the counter to get the shell cracked up then run some cold water peeling the egg while you have it held under the running water. The shell will come right off rather easy...

Never use fresh eggs.
Put eggs in ice cold water, bring to a rolling boil.
Turn off the heat, cover and let stand 15 minutes.
Immediately immerse the eggs into ice water. After they are cooled they should peel very easily whether they are peeled immediately or after storage in the fridge.

The answer is to STEAM them - do not boil them. It doesn't matter if it's an old egg or fresh egg , they'll peel like a dream. Since I found this out, I have never boiled them.

1. Add tablespoon of white vinegar to water when you boil the eggs to prevent them from cracking.
2. The eggs must be 100% cold to peel them easily. Soak in running ice cold water in pan or refrigerate several hours.

Just boil them as normal and then run them under cold water. The cold makes the white recede away from the shell. Slips right off.

A friend of mine soaks her boiled eggs in cold, sugared water before peeling! I was skeptical, but it's worked for me.
