If you are lost out in the woods and really need to survive, do this.

Squirrels are lazy like anybody else and will not climb a tree straight up if they don't have to; if they are not being pursued. So take a fine wire or strong fishline from your survival kit (you do have one, don't you...?) and make a small noose snare out of it. No more than two inches across. Tie the loose end onto the middle of a stick about an inch wide and four or five feet long. Lean it up against a tree. The noose should be almost touching the stick.

What happens is, the squirrel runs up the stick because it is easier than climbing the tree straight up, puts its head through the noose and panics, then strangles itself trying to run away. (I'm sorry, but I just can't feel much sympathy for anything that stupid, to put its head into a restricted space like that. Anyway, I wanted to live, really badly, so it was them or me.) You should make up about a dozen snares like this because you don't get much meat off one squirrel.

Now you have to skin the squirrel. Cut around the paws, up the belley (don't cut deep, you don't want to open up the intestines) and around the head. Get a good grip on the head and pull the skin off, with the fur, turning it inside out like a sock. Clean the carcass, getting rid of the guts and organs. Cut around the crotch and get rid of the intestines in one piece. Cut the head off whole. The best way is to slow cook them. It doesn't get rid of the gamy taste, but at least they are more tender that way.

If you are willing to listen to someone who speaks from experience, take along some jerky instead, and plenty of water to go with it. It's a lot easier to catch. If you are out for very long, you can always use squirrels when you run out.

Get a humane animal trap. Hardware stores often sell them, but if yours doesn't call a local animal resuce charity or animal control and they can tell you how to get one. Bait it with peanut butter on bread. Other things may work, but my sister sucessfully caught a squirrel with that. After you caught it, resease it outside. Don't be afraid if it was a wierd almost growling noice - its their way of saying "don't mss with me" (the squirrel is going to be very afraid); if you just open the door of the trap, it won't stick around to fight you, it will just run away. Make sure you figue out how it got into your house in the firt place though, or it (or others) may come back in. Maybe the guard on the top of your chimey came loose? That's how my sister got her squirrels.
