Feshly ground pepper has the best flavor or freshest flavor. When you grind and store pepper it will lose some strength in flavor. I also like to use fresh cracked pepper for its texture, pre ground pepper is too fine.

Like any spices -- nutmeg, cardamom, cinnamon -- peppercorns stay potent longer when stored whole, which is why the preground stuff lacks the punch of freshly ground, especially if that little tin has been sitting in your spice rack for as long as you've had your spice rack.
Plus, when you grind your own, just as with coffee beans, you can control the coarseness, usually with a turn of a screw on the bottom of the mill, tightening or loosening the space between the gears. With pepper, a finer grind produces a milder effect, distributing the flavor more evenly throughout a dish, while a coarser grind gives bursts of intensity here and there.

The question was answered when you ask it. Freshly ground pepper is fresh and has a much better flavor and more of a "bite" than pepper that has been ground and then just sits in a can and loses flavor. I hope this helps.

Professional cooks want their food to be fresh when it's served. When you buy pre-ground pepper from the store, your never really sure how long it's been there. When the pre-ground pepper get shipped to the store, it's already old and stale before it arrives at its destination.

Of course, freshly ground pepper retains more of its flavor than those pre-ground.
Same principle applies to slicing/cutting food and vegetables. When slicing meat, always make one clean cut through. never do the sawing motion thing. The more you saw the meat, the more you are removing the flavor from the meat.

Its the same with any herb. fresh gives a stronger flavor. Basil, Oregano, Dill, Rosemary. etc.
Pre-ground pepper is just sitting in a container, so it's losing the flavor. fresh ground pepper has a bite.

Pepper ground from peppercorns has a strong flavor. Preground pepper in the can doesn't have a taste in comparison.

Here is why. With preground pepper you only get the heat from the pepper. When you grind it fresh you get some of the flavor and some heat..not just heat.
