I looked for clues on the back of a store-bought ice cream carton, and all I saw on the "ingredients" column was junk like "high frutcose corn syrup", and "guan bean gum" or something like that. Sure, it makes it light and fluffy, but it's not something I have in my kitchen.
What should I add?

I was having the same problem...I read somewhere that scalding the milk will make it creamy and reduce icy-ness. I tried it today actually by heating the milk and refrigerating it for several hours - it's a world of difference.To save Your Batch try to heat it up again...cool overnight and pour back in the Ice cream Maker.Make sure everything is clean and cold.If that doesnt work just use it for a Milk Shake,add fruit orFrench Vanilla Cool Whip or Heavy cream and Blend well(thats what i did with my Messed up ice cream.

substitute the milk in your recipe for heavy cream or better yet go to the nearest smart & final and buy manufacturer's cream which has the highest fat content of all the creams, this will solve your problem, regular milk doesn't have enough fat in it that's why it turns icy

just put it in freezer for one night in an open container.Next morning keep it outside for few minutes till it becomes little soft.Then churns it with a churner to make it fluffy.store it in closed plastic container and freeze it.Enjoy. And if successful invite me.

I use "cool whip" it makes it a little creamier.
It also freezes better.
