I want to show her that i can actually cook (which i can), but i dont want it to be too complicated.

Picnics are so under rated!
Why don't you make her dinner and surprise her take her & the food to the bay or the beach or even a nice quiet park. They have disposable grills, or some place have their own grills just bring foil & charcoal, get some London broils They are good huge portions ($6 or so) and make a nice salad (ingredients about $8) and if you want to get fancy buy some baby shrimp add some butter & garlic in aluminum on the grill & pour on top of steak (baby shrimp about $4 a lb 1lb is enough for 2) If you have a nice picnic basket and a blanket, you will have a great time. You could do it all for $40 or less and use the other $40 for a bottle of wine or something, and all the work you do will be so gratifying later on.

Appetizer:

Shrimp cocktail

In a couple of chilled wine glasses, add crushed ice, layer with cocktail sauce, rim the glasses with shrimp (she will be totally impressed)

Second course:

Salad:

Buy spring mix, keep it simple, add some olives, artichokes (out of a can) and croutons, drizzle with olive oil and salt and pepper.

Main Meal:

Shrimp Scampi:

Melt 1/2 stick butter with 1/2 cup olive oil in a pan, add 1 cut up onion or a few shallots, add a couple tablespoons garlic (buy the pre chopped kind) saute for 5 minutes, add a bumnch of pre cooked shrimp, cook for 5 minutes maybe 7...have some fettachini noodles cooked, add to pan, toss it all and add salt and pepper, some dried parsley and some hot red pepper flakes if you want to.

She will think your a gourmet and this meal takes less than 20 minutes to make.

This is a super easy recipe to use that is a pleaser and it looks like you went to a ton of trouble. Its called Zuppa Toscana. Its an Italian soup that I have made a million times and my husband just loves. Its really romantic.

*Slice up 3-4 medium potatoes. Any kind will do. I like the reds, but I've used reds or russets.
*In an 8 quart pot put in 1 quart of water, and 2 cans of chicken broth. Add the potatoes and bring to boil.
*Coat the bottom of a frying pan with extra virgin olive oil.
*Dice 1 large onion and about 3-4 cloves of garlic. I love garlic so I put almost a whole bulb in. Throw into the pan and saute until onions are translucent.
*Pour about a cup of chicken broth into the frying pan to make sure you have all the good bits from the bottom of the pan. Dump the contents of the pan into the pot with the potatoes.
*Using the same frying pan fry up 1 pound of ground italian sausage. Drain if it needs it.
*Next put 1/2 cup of REAL bacon bits into the sausage. Not bacos or something like that. You have to use the real bacon bits. Hormel and Oscar Mayer make them.
*Put another cup of chicken broth into the pan again to pick up the good bits on the bottom of the pan and dump into the stock pot.
*Now you have to cook all this until the potatoes are done. I add some salt and lots of fresh ground pepper. The flavor deepens as it cooks and it gets a little spicy, so don't add too much pepper if you don't like the heat.
*Once the potatoes are done, take a few handfulls of fresh spinach..you can use the frozen too, make sure to squeeze the water out though first. Run a knife over the spinach to break it up. Add that to your pot.
*Add 1 cup of heavy cream.
Now just stir this and make sure to turn the heat down to low once you put in the cream. It can be done now or you can let it simmer for hours. This is one of those soups that gets better with time.

Now make yourself some cesar salads for your first course. Pop in some garlic bread or breadsticks. Get a bottle of wine. Set the table with linens. Put on some Dean Martin.

For desert you can make flavored coffee and biscotti.
Do this right and you'll have her in the sack in no time.

Pesto and Pine Nut
White Sauce Over Pasta
4 tbsp. butter
4 tbsp. flour
1/2 tsp. salt (or more to taste)
1/4 tsp. pepper
2 c. milk
1-2 tbsp. pesto (to taste)
1/4 tsp. oregano
3 tbsp. roasted pine nuts
1 c. shredded soft white cheese
Romantic Tip Box
Holly says you can't rush a good white sauce. Blend it together slowly and stick with it to keep it smooth.Basic white sauce: in saucepan melt butter over medium heat. Stir in flour, salt and dash pepper. Add milk a little at a time stirring constantly to keep sauce smooth. Cook and stir over medium heat until thickened and bubbly. If you like it thinner, add a little more milk. Cook and stir 2 minutes more.

Add pesto, pine nuts and oregano. Add cheese stirring constantly until melted and sauce is smooth. Add anything else you'd like such as cooked veggies, shrimp or mushrooms.

Serve over hot cooked pasta. Linguine or even spinach linguine is nice. Open a bottle of chilled white wine. Light a candle. Enjoy.

Grill a couple of chicken breasts and serve them with a green salad with walnuts, bleu cheese and dried cranberries with a raspberry vinaigrette dressing (perfect for a hot day). Serve it with a little couscous (simplest, tastiest thing in the world to make) and for dessert put a slice of angelfood cake in each serving dish. Top with a scoop of sorbet and thawed frozen raspberries or strawberries. Perfect dinner for a hot, romantic night.

You can never go wrong with a good pasta and marinara sauce along with fresh garlic bread and a salad. Most of the work is already done all you have to do is prep.
