Don't know - but Ouzo does the same thing - as does Pernod. If you leave a glass of Ouzo and water overnight - it goes clear again! Weird. Something to do with aniseed maybe?!

I too drank Raki when I was staying in a small village called Bali. The Greek waiters kept bringiing more and more of this stuff for free and I didn''t want ot offend them. Guess who was ill the next day?!
I think Raki is a bit like Pernod or Ouzo (also Greek) and these also turn opaque when another liquid is added.
It is called "Lion's Milk" because of the whitish colour it becomes when another liquid is added.

I have pasted some further info for you:

Rakı (Turkish rakı IPA [rakɯ]) is an anise-flavored apéritif that is highly popular in Turkey and is often associated with the country. It is produced by twice distilling either only suma or suma that has been mixed with ethyl alcohol in traditional copper alembics of 5000 lt volume or less with aniseed.[1] It is similar to several kinds of alcoholic beverages available in the Mediterranean and parts of the Balkans, including pastis, sambuca, ouzo, tsikoudia, tsipouro, and mastika. The general consesus is that all these liqueurs are proceeders of arak, a similar arabic liqueur, but it remains a theory. [2]

Rakı-water, the national drinking tradition, is called Aslan Sütü, meaning Lion's Milk in Turkish, milk because of it's color, and, lion as it stands for courageous, strong, a true man's beverage.

There is further information on the site:

I hope this helps:>)

P.S. My theory is that these drinks contain a resin/gum substances which is dissolved by the strong alchohol, but when other liquid is added this disperses the gum particles.
