This one is really easy and very good. I've made it with many different types of fruit, including berries, and it always turns out good. You can use drained canned or frozen fruit, or fresh fruit, whatever you have on hand.

Busy Day Cobbler

1/2 cup sugar
1/2 cup flour
3/4 teaspoon baking powder
1/8 teaspoon salt
1/3 cup milk
1/4 cup butter
2 cups fruit drained (or raw fruit or berries can be used)

Melt butter in small baking dish. (I use loaf pan). Pour batter over butter. DO NOT STIR. Spoon fruit over batter. DO NOT STIR. Sprinkle 1 tablespoon sugar on top. DO NOT STIR. Bake at 350 degrees until crust rises to top and is brown.

Berries & Cream Cake

A pound cake mix is used for the layers in this light and attractive dessert.

Prep: 30 min - Bake: 20 min - Cool: 1 hr

Cake Ingredients:

1 (16-ounce) package pound cake mix
3/4 cup milk
2 eggs

Filling Ingredients:

2 cups whipping cream
1/4 cup sugar
2 tablespoons freshly grated lemon peel
3 cups fresh berries (blueberries, raspberries, sliced strawberries)
Grated lemon peel, if desired

Heat oven to 350°F. Grease and flour 15x10x1-inch jelly-roll pan; set aside. Combine cake mix, milk and eggs in large bowl. Beat at low speed for 30 seconds. Increase speed to medium. Beat, scraping bowl often, until well mixed.

Pour batter into prepared pan. Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool completely.

Beat whipping cream in large bowl at high speed until soft peaks form. Add sugar and lemon peel; continue beating until stiff peaks form.

Trim edges of cake. Cut cake crosswise into three equal pieces. Place 1 cake piece on serving platter. Spread 1/3 filling over top; arrange 1/3 berries over filling. Repeat with remaining cake layers, filling and berries. Cover; refrigerate until serving time.

To serve, cut into slices. Garnish with grated lemon peel, if desired.

TIP: Already prepared pound or angel food cake loaves can be purchased for an even easier dessert. Just spoon the filling and berries over slices of cake.

This is soooo good and so easy to make.

all you need is a box of yellow cake mix,
1 cup of blueberries
1 cup of raspberries
1 can of crushed pineapple
1 stick of butter.

put half of the cake mix of the bottom of a baking dish, then add the berries on top of the mix. pour crushed pineapple over berries, top with remaining cake mix. Cut butter into cubes and scatter over mixture. Bake at 350 until golden brown. (start checking after 20 minutes).

This is also really good topped with vanilla ice cream or whipped cream.

Hope this helps. ENJOY!

Here are two I like. You can use fresh fruit or canned pie filling for either one.

Grandma's Cobbler
1 T. butter, melted
1/3 cup sugar
1/2 cup milk
1 tsp. vanilla
2 tsp. baking powder
1 cup flour.
Stir together and set aside.
Mix:
2 to 3 cups fruit
3/4 cup sugar
1 to 2 T. corn starch
Spread fruit mixture in an 8x8 pan. Top with dough mixture. Sprinkle additional sugar over dough. Bake at 350 for 30 minutes. Serve slightly warm with ice cream.

Golden Crunch
2 cans fruit (or for raspberries, use the fruit mixture from recipe above.)
1 1/2 tsp. cornstarch
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1 T. lemon juice
Mix all this together and spread in 8x8 inch pan.
Then in small bowl combine:
1 cup quick cooking oats
1/3 cup melted butter
1/2 cup brown sugar
1/4 tsp. salt.
Crumble over fruit mixture and bake 30 minutes at 375.
Serve warm with vanilla ice cream!
