NUA PAD PRIK (CHILLI BEEF)
Yield: 6 Servings
3/4 lb Beef steak (rump or sirloin)
1/4 ts Salt
1/2 ts Black pepper
2 tb Oil
4 Cloves garlic, crushed
2 Green chillies, sliced
1 Fresh red chilli, sliced
1 ts Sugar
1 tb Fish sauce
1 Heaped Tablespoon chopped
-basil or fresh coriander
-leaves
Trim off fat and slice beef into pieces about 2 inches square and 1/2
inch thick. Season with salt and pepper. Heat oil and fry crushed
garlic, then add beef and fry on both sides until well browned. Add
chillies, fish sauce and sugar. Stir and simmer on moderate heat for
5 minutes, turning meat occasionally. Stir in chopped herbs and spoon
onto a serving dish.

Savoury Chilli Beef
Ingredients
1 kg beef (boneless and preferably lean meat, without any fat)
1/2 kg capsicum(large non-spicy green chillies)
3 medium sized potatoes
6 really large spicy green chillies (or to taste)
6 large regular onions
3 spring onions
4 tablespoons of ginger-garlic paste(or to taste)
1 tomato
soya sauce
chilli sauce
Method
Chop beef into tiny cubes. Sprinkle liberally with soya sauce.
Add salt to taste and ginger-garlic paste.
Mix well and marinate for 20 mins.
Peel and cut potatoes into cubes.
Boil separately till semi-cooked, fry lightly and keep aside.
Chop the regular onions fine.
Chop the spring onions fine.
Chop the capsicum into 1 inch squares.
Chop tomato fine.
After marinating, fry beef cubes on high flame. Water will come out of the meat. Keep frying till dry - but don't let it burn!
Once dry cook in pressure cooker with a little water, for 10 mins. or till cooked.
Fry regular onions in a separate vessel till well browned.
Add tomato and fry till liquidified.
Add ginger-garlic paste and chillies and fry well (do not burn!)
Add spring onions and fry very lightly.
Add capsicum and fry very lightly
Once the meat is cooked dry up the excess water and add it to the fried mix.
Add potatoes. Stir well and add chilli sauce to taste.
Now you are ready to serve... doesn't that smell good!!!

Chilli Beef Recipe
Ingredients
Beef - 250 gm
(thinly sliced)
Garlic pods - 5 nos
Green chillies - 4 nos
Soya sauce - 2 tbsp
White pepper powder - 1 tsp
Black pepper powder - 1 tsp
Sugar - 1 tsp
Chicken stock cube - 1 no
Spring onions(chopped) - 2 tbsp
Cornflour
Egg - 1 no
Preparation Method
1)Mix together 1 tbsp of soya sauce, 1/2 tsp each of black and white pepper powder, 1 egg and enough cornflour to make a good coating.
2)Marinate the beef with the above mixture for about 10 mins.
3)Deep fry beef in hot oil, until golden brown.
4)Remove and drain the oil.
:- Be careful not to burn the beef.
5)Make a paste of garlic and chillies by chopping them and grinding in a mixer grinder.
6)Heat 1 tbsp of oil in a pan.
7)Fry the chilly-garlic paste for around 30 secs on medium heat.
:- Do not burn.
8)Dissolve the chicken stock cube in one cup of boiling water and add it to the pan.
9)Add the remaining 1/2 tbsp of white pepper, 1/2 tbsp of black pepper, 1 tbsp of soya sauce and 1 tsp of sugar.
10)Bring it to a boil.
11)Add the fried beef pieces.
12)Allow it to cook for a few more mins, until the gravy thickens.
13)Add the chopped spring onions and stir for 10 secs and remove from heat.
:- Do not add any salt as the Soya sauce and stock provides enough.
Sticky Chilli Beef
1 tbsp vegetable oil
200g/7oz lean frying steak, thinly sliced
1 tsp caster sugar
1 tbsp Chinese cooking wine or sherry
1.25cm/½ inch piece root ginger, peeled and grated
1 clove garlic, crushed
1 long red chilli, deseeded and sliced
1 (300g) pack of fresh cut vegetable and beansprout stir fry
½ tsp Chinese 5 spice powder
1 tbsp dark soy sauce
To serve: egg and pea rice
Heat the oil in a large frying pan or wok, add the steak and stir fry over a high heat for 4 mins or until browned. Add the sugar and sherry and stir fry for a further 1 min or until coated in a sticky sauce.
Add the ginger, garlic and chilli along with the stir fry vegetables and stir fry for 1 min. Add the spices and soy sauce and stir fry for 1 min. Serve with egg and pea rice.
Cooks tip: For egg and pea rice, cook 75g/3oz long grain rice in the normal way, stirring in 75g/3oz frozen peas for the final few mins of cooking. Drain. Then in a small pan, heat 1 tbsp of oil, add 1 beaten egg and cook stirring occasionally until the egg scrambles. Stir the egg into the rice and serve.
