What else can I use in place of the cast iron skillet?

I have seen them made in glass pans. I think the heat conduction is similar. Good luck!

My mom always baked them in a round pyrex cake pan. They came out great. The type of pan really doesn't matter, but do yourself a favor and get a cast iron skillet. Not just for this. They are great for everything. That's almost all I use anymore. When seasoned properly they are non stick and actually much more healthy to cook in.

metal skillets were used because that is what they had in 1920's when the cake was popular. Nowdays the metal is used because it keeps the sugar's from scortching so badly.

It won't have quite the same taste, but you can use another type of pan...just try to find roughly the same size. Hope it helps.
