Chicken Schnitzel
2 large eggs
1 clove garlic, minced
1/2 teaspoon minced fresh parsley
coarse salt
ground pepper
1 cup fresh breadcrumbs (made from 3 slices white bread)
1/2 cup grated parmesan cheese
4 (6 ounce) chicken cutlets, pounded to an even 1/4 inch thickness
4 tablespoons olive oil
1 tablespoon butter
1/4 cup dry white wine
1/2 cup chicken broth
1 tablespoon fresh lemon juice
4 servings
1. Beat eggs in a shallow bowl with garlic, parsley, salt and pepper.
2. In a separate shallow bowl, combine breadcrumbs (I pulse the bread slices in the food processor to get nice fresh crumbs) and parmesan cheese.
3. Dip each cutlet into egg mixture to coat completely, then dredge in breadcrumb mixture, patting it on to help it stick.
4. For each 2 cutlets, heat 2 tbsp oil in a large non-stick skillet over med-high heat.
5. Cook 2 cutlets at a time until golden brown and cooked through, about 3 minutes per side.
6. Transfer the cooked chicken cutlets to an oven-proof platter or pan, and keep warm in the oven while cooking the remaining cutlets and making the sauce.
7. Wipe the skillet clean with paper towels.
8. Heat butter until melted and add wine.
9. Heat 30 seconds and stir in broth and lemon juice.
10. Season with salt and pepper.
11. Simmer 2 minutes.
12. Pour broth mixture over cutlets and serve.
13. Garnish with parsley and lemon slices

Couldn't be easier and its fantastic. All you need to add is a little fresh fruit salad. Great any time of the day.
TRADITIONAL QUICHE
1 ½cups milk
½cup bisquick
4tablespoons butter, room temperature
3eggs
pinch of salt
4-5drops of Tabasco Sauce
1cup diced ham, turkey, chicken, shrimp, bacon or
sausage (See Note)
2green onions, chopped
14 oz. can sliced mushrooms, drained (or use fresh but
sauté first)
1cup grated sharp cheddar cheese (See Note)
NOTE: I have a tendency to be a little more generous with the meat and cheese – using closer to a 1 ½ cups of each.
Preheat oven to 350. Combine first 5 ingredients in blender and mix well. Turn into ungreased deep 9-inch or regular 10 inch pie plate. Sprinkle meat, onion, mushrooms, and cheese – lightly press into batter with a spoon. Bake until top is golden, about 45 minutes.

Lasagna:
My quick and easy recipe:
1/2lb Hamburger
1/2lb Ground Italian Sausage
1lb Shredded Mozzarella Cheese
1lb shredded provolone Cheese
1 large container Ricotta or small curd cottage Cheese
1 Jar your favorite spaghetti sauce
1 box no cook lasagna noodles
Cook ground beef and sausage (chop to tiny pieces) Drain grease. In large bowl combine sauce and meat. Layer with the rest of the ingredients starting with sauce and ending with cheese and bake 45 minutes. Sprinkle with Parmesan cheese.

Shrimp Asopao Stew,
In a medium pot you add 3 cups of water and you bring to a boil
to the pot u would also add salt, pepper, spanish adobo, 1 clove of chopped garlic and spanish sazon with achoite, 3 chopped potatoes into small pieces and 3 small corn on the cob ( frozen ok to add), 1 can of tomato sauce, 1 small spoon of spanish olives about, 1 1/2 cup of raw rice( rinse rice before its put into the pot and at the end add either frozen or cooked shrimp, Prep time 30 minutes. Make sure rice has opened up and is soft when u bite into it. too thicken the sauce u can add 1/2 a cup of instant mashed potatoes of a medium spoon of flour it works with any stew to thicken sauce.

Take Boneless/skinless chicken breast season lay in greased baking dish, season with pepper and garlic(no salt)'
In a seperate bowl mix 3/4 cup parmesean cheese(can or fresh) with 3/4 cup mayo
Spread over chicken, sprinkle with bread crumbs, Bake for 30 min in a 425 oven, Viola, DELICIOUS

Mexican Lasagna
3 tablespoons extra-virgin olive oil
2 pounds ground chicken breast, available in the packaged meats case
2 tablespoons chili powder
2 teaspoons ground cumin
1/2 red onion, chopped
1 (14-oz) can stewed tomatoes or fire-roasted chopped tomatoes
1 cup medium heat taco sauce
1 (15-ounce) can black beans, drained
1 cup frozen corn kernels
Salt
8 (8 inch) spinach flour tortillas, available on dairy aisle of market
2 1/2 cups shredded Cheddar or shredded pepper jack
2 scallions, finely chopped
Preheat the oven to 425 degrees F.
Preheat a large skillet over medium high heat. Add 2 tablespoons extra-virgin olive oil – twice around the pan. Add chicken and season with chili powder, cumin, and red onion. Brown the meat, 5 minutes. Add stewed tomatoes or fire-roasted chopped tomatoes and taco sauce. Add black beans and corn. Heat the mixture through, 2 to 3 minutes then season with salt, to your taste.
Coat a shallow baking dish with remaining extra-virgin olive oil, about 1 tablespoon oil. Cut the tortillas in half or quarters to make them easy to layer with. Build lasagna in layers of meat and beans, then tortillas, then cheese. Repeat: meat, tortilla, cheese again. Bake lasagna 12 to 15 minutes until cheese is brown and bubbly.

the name is kufta its an arabic food.
get about 3 pounds ground beef add salt, pepper and 1medium grated onion thats the secret and in all arab dishes you must add parsley its a fresh green herb mix all of it by hand and shape it in to a finger like kufta kabab then cook in oven for 30 minutes or until ready serve with rice or eat as a sandwich
its easy and delicious!!!

Rack of lamb.
Preheat the oven to 400.
Very lightly criss-cross the fat side with a sharp knife. Smear the whole thing with garlic butter. Sprinkle with salt and ground pepper. Place it in a baking dish, fat side up, and bake for 30-35 minutes. Remove from oven and let sit for about five minutes before slicing into chops. Serve it with mint jelly.That's it.

Chinese Pudding. first you brown 1lbs. of some ground beef with lipton onion soup mix, green bell pepper, onion, black pepper and salt.then boil about 6 big potatoes cut in 4ths. then you mash the potatoes. in a baking pan layer it with groundbeef then potatoes then your favorite chesse mines is american and mild chedder. repated with remainding ingredients. Bake at 350 degree F. for about 20 min.
