The anodized aluminum is good. It has the same molecular properties as sapphire (gemstone) second hardest to diamond. But don't get the cheap stuff since only the surface is anodized and the underlying aluminum is not good for you long term when the surface is scratched deeply. My choice is Caphlon professional.
The good old standby iron is great because is imparts some iron into the food that is cooked in it.
Since you are asking the question, you know to avoid Teflon and aluminum. I don't trust the ceramic coated iron cookware since ceramics can have lead in them.

Some studies have 'shown' that aluminum cookware is a factor in Alzeimers' Disease, while others don't show a corellation. Teflon can breakdown at high temperatures. If you burn your food a lot or almost burn down your house by letting pans get too hot, teflon wouldn't be a good choice. That said, go with what you like and would be happy with.

A nurse at the last blood drive I attended told me to use cast iron cookware as much as possible to keep my hemoglobin count up.Stir fry veggies are exceptionally good cooked in cast iron.

a couple of years ago, i read in a consumer's article that "cook's essentials" from (i could not believe, i never would buy off tv) qvc. is just as terrific as commercial grade, top notch! and the prices are not bad. now, they have a whole line, coated, uncoated, hard anodized, etc all colors everything. this sticks in my brain because i love to cook, but i have so many pots and pans from mom, aunts, grandma, etc. one day, i'll invest! enjoy! i think they also sell cast iron.

cast iron... that way you get the minerals and nutrients that our soils have been depleted in due to mass production from not enough time being allotted in crop rotations. Don't get teflon, that tends to wear off and has carcinogenic (cancer causing) qualities to it.
