A mixture of all things good, lovingly prepared and put into a casserole dish and baked. Although my mom used to make a pretty sick one. It had hamburger on the bottom and a can of mixed veggies on the top with a can of cream of mushroom soup and tater tots on top of that. Man, that was nasty.

It just means anything baked in one dish, like a one pot meal. All your meat, and sides are made together, and baked, usually in a casserole pan. :) Some common ones are ziti, or tuna casseroles.
