Easy. Take rip avocados take out the seed, and out of the skin, mush it up really well... ( or not if you want chunky) dice a few tomatoes, and onions and make a really nice dip! You can also use a mild hot sauce( el paso) with the avocados

GUACAMOLE

Avocado Salad:

1 ripe tomato, peeled
2 avocados
1/2 onion, minced
1 tablespoon vinegar
1 chopped green chile, or to taste
salt and pepper to taste

Mash together the tomato and avocados. Stir in remaining ingredients.

Serve with warm tortillas.

Optional: Mix in pomegranate seeds for added color and a unique but authentic variation.

Mash up about 4 avocados really good, add about 4 tbs of sour cream, very finely chopped garlic (about 2 cloves), a half a small lime squeezed in, salt and pepper to taste. Lemon pepper is really nice & if you did want it spicy you can add a couple shakes of hot pepper sauce. Make sure to whisk it all together smoothly & refrigerate for best flavor. Very yummy.

Take any of the above recipes and add a can of diced green chili peppers. They add flavor but not heat.

For two, take one avocado, mash it with a fork (without the skin and everything, duh!). Add a teaspoon of balsamic vinegar (white vinegar could do) and 1/8 tsp of salt. That's it. Nobody who's gonna taste it is gonna know it's a joke to make.

Shhh, don't give the recipe to your guests!
