You don't have to have a middle name. Or you could just use a middle initial. I can't think who, but I've heard of some relatively famous person who was given a middle initial but no name.
But for actual names, Gwyneth is sort of British, and both of them are old fashioned. So you can either carry on in that style, or contrast them with something new. For example, Violet Agnes or Violet LaToya. I don't recommend either of those middle names - they're just examples!
I personally think Gwyneth is prettier. Gwyneth Sophia? Violet Rose? Gwyneth Saffron? Sorry, nothing much comes to mind! Maybe you can find a list of Renaissance names.
