Ceviche. It's seafood (shrimp and fish) and sliced onions marinated in spicy citrus marinade in the fridge for a couple hours. Cooking the seafood portion is minimal (quick poaching) or not at all, most of the 'cooking' comes from soaking the meat in the marinade, which transforms it into a form that looks and feels like it was steamed, but it's not.
Very refreshing on a hot day, and no carbs, unless you serve bread or corn on the side.

Tyson makes a really good grilled chicken breast strips.
I toss these with romaine lettuce, Parmesan cheese and Caesar dressing. Makes a really good grilled chicken Caesar salad.
No cooking involved.
I've made this alot lately. It's so hot here and I'm also trying to cut down on the carbs.

Open up a package of tuna. I reccommend the smoked flavored tuna over a nice salad of baby greens. Add some tomatoes, olives, purple onion, cucumber and olive oil, lemon, and fresh ground pepper as a dressing. Oh yummy I'm hungry now.

steak tartare
Ingredients:
1/2 pound filet mignon, ground for steak tartare (ask your butcher)
2 tablespoons finely chopped shallots
2 tablespoons finely chopped parsley
2 tablespoons finely chopped capers
2 or 3 drops of Tabasco
salt
freshly ground black pepper
Directions:
Mix beef with shallots, parsley, and capers. Place mixture in chilled bowl. Add Tabasco and season with salt and pepper. Refrigerate until ready to serve.

Try this, its real quick
cooking spray in a pan
brown chicken breast in garlic and little lemon juice
saute some mushrooms
cover all of it in parmessan cheese and serve over your favorite lightly steamed vegetable.
I eat this all of the time.
