Campfire Potatoes

Sliced potatoes (I use a sweet potato with a bunch of yellow potatoes for more fun)
Sliced onion
Butter, oil or shortening
Salt, pepper and garlic powder to taste.


Assemble in a rectangle on a large sheet of heavy duty aluminum foil. Fold over the foil and seal to make a flat, well sealed pack and cook over the coals til the potatoes are tender.



Campfire Stew

1 can any kind of beans
1 can corn
Chopped onion, carrots and celery (chop before you leave home)
Cubed potatoes
Meat of your choice, cubed
Garlic to taste
2 Bouillon cubes
Water as needed

Brown the meat and onion in a Dutch oven over the campfire, add the carrots, potatoes, celery, and garlic with about 1 cup of water. Cook til the potatoes start getting soft. Add the remaining ingredients. Simmer as long as you need, adding water if needed. The beans replace flour as your thickening agent, so you can control how thick it is by adding more beans if needed.

This is for real camping backwoods type where your not going to mess stuff up by digging a hole. Have your standard campfire and in the morning scrape off the coals and bury a beef roast in the warm earth under the fire.(add about 2 inches of water and about 1 tsp of salt per pound)in a pot with a tight fitting lid, or even better a dutch oven. cover it with a few inches of dirt and keep a fire going over it for a few hours. Forget it and go play until dark and it will be hot and tender and yummm!!

take heavy duty foil. Put in cut up steak or stew pieces of meat, potatoes, squash and other veggies. Season with salt, pepper and garlic. Put in coals. Turn often but make sure you do not poke any holes in the foil. Cook about 15-20 min. take out and open. Be careful because if the meat is not cooked you will need to put back in for another 5-10 min.

Or if you have a dutch oven then put in beef brisket and BBQ sauce. Put in coals for 2-3 hours. Makes really good BBQ Beef. Put on buns and eat.

Take 2 sheets of tinfoil and tear into a square about 10 x 10 inches Take a hamburger patty, baby carrots, and potato slices (with the skin) pour cream of chicken (or mushroom) about 1/2 cup concentrated. Salt and pepper and then fold the tinfoil around it, folding the edges securely so it becomes a pouch. You can put this directly in the ashes or coals, as long as it is sealed properly. Cook roughly 20-30 minutes...Enjoy!

Invest in some wooden rods about 2 feet long and about and inch thick. Spray with cooking oil. Take Pilsbury biscuts in the tin...Take one biscut over one end of the rod, and pull it down so that it forms a cup. Hold over fire, until it is lightly brown. Remove from rod..It should be firm, and slide right off the rod if it is slightly doughy inside bake it a bit longer. Fill with pie filling. Fruit or chocolate and top with whipped cream.

4 potatoes cut into chunks
4 parsnips cut into chunks
4 sweet potatoes cut into chunks
Parsley chopped
Olive oil (about a cup..enough to flavor, but not drown the veggies)

Place in a dutch oven, cover and cook over and under hot coals for about 45 minutes.

when we go camping its not elaborate stuff we fix. just clean a stick and cook some hotdogs, get a pan and fry some hamburgers, or if you find a sandwhich pan , they make these for camping it is heavy iron square shaped pans with long sticks. anyhoo I take 2 pieces of bread spread a litte butter on them then put a big tablespoon of pie filling ( I like blackberry) shake a little sugar on it then close and cook until the outsides are browned. take out and coat outside with sugar and you have a hobo pie.

CAMP FIRE BACON & EGGS

1 stick or roasting fork
1 paper sack
1 strip of bacon
1 egg

Place piece of bacon in bottom of small paper lunch sack. Extend over coals of camp fire or charcoal fire using stick or roasting fork. Be careful not to let bottom of sack touch the coals. As bacon cooks the bottom of the sack will be coated with bacon grease. When bacon is almost cooked, break egg into sack. Continue holding sack over coals. When egg is cooked, peel back top of sack and eat out of the bag.

Get some pastaroni noodles and sauce mix[comes in a box at any qcorcery store/gas station, etc.] and get some canned chicken/turkey breast meat. Boil the noodles and sauce, put in the meat when done and you ave your own fettucini chicken pasta supreme:D
Or take pita bread, cheese, and italian sausage and make sandwhiches^_^

Save room for smores:D

Need to have a cast iron skillet for this. Prepare before you go-beat as many eggs as you will need for your breakfast.(put in container) Sautee bacon or sausage, onions, green peppers.(put in another container) bring shredded cheese and whatever spices you like. Heat skillet and put everything in it, cook on low heat until eggs are done> YUMMY

1 bag miniature peanut butter cups
1 bag marshmallows (regular,not miniature)
1 box graham crackers
To make first one:make a sandwich of a reese's mini and 2 graham crackers.
Toast a marshmallow till puffy,and a golden color.
(Do not burn).
Put Marshmallow between top cracker and Mini reese's cup,close gently and get ready to make another.
BET YOU CAN'T EAT JUST ONE!
