I need an idea of what else I can put in my meatloaf. I usually add ketchup, onions, bread crumbs, egg, garlic powder, salt, peper. Anything else I can add to make it taste good. What do YOU put in that I'm missing?

Da dude.... on the bottom of your meatloaf pan, sprinkle abit of brown sugar...over that, put some ketchup and make the meatloaf as you usually do...bake it for the same time as you do and it will be great..

Here's the recipe I use:

Brown Sugar Meatloaf Recipe
Got this one from allrecipes.com. It's one of their most popular recipes. I use chili sauce or salsa instead of ketchup to give a nice contrast to the sweetness of the brown sugar.
1/2 cup packed brown sugar
1/2 cup ketchup
1 1/2 lbs lean ground beef
3/4 cup milk
2 eggs
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1 small onion, chopped
1/4 teaspoon ground ginger
3/4 cup finely crushed saltine crumbs
6-8 servings

1. Preheat oven to 350 degrees.
2. Lightly grease a 5x9 inch loaf pan.
3. Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
4. In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf.
5. Place on top of the ketchup.
6. Bake in preheated oven for 1 hour or until juices are clear.

Take a skillet and stirfry olive oil, chopped peppers, onions, garlic, salt and pepper, add crushed red pepper flakes and ketchup. In a bowl take some milk and add pieces of bread to it soak the bread until nice and wet. Season your ground beef and pork with salt and pepper in another bowl and add half of the stirfry mixture to it add an egg and some bread crumbs take the bread out of the milk and squeeze out the excess liquid break it up into the meat mixture and form into a loaf, line the pan with a piece of bread and add your meat on top of it, pour the remaining stirfry over the loaf and cook it as you would your normal meat loaf I guarentee it will be moist and delicious instead of dry and hard!

I like green pepper in mine.

Most people put in celery I think (I don't though)

My hubby's fav. meatloaf is:
1 lb lean hamburger
1/4 lb italian sausage
1 cup bread crumbs (we use pumpernickle)
1 egg
1/4 cup spaghetti sauce
onion

Once you have it in the pan and mostly cooked (15 min to go) drain off any fat and add a little more sauce and some parm. cheese to the top.
YUM!

This is a nice change from the usual meatloaf - my family loves it!!

SOUTHWEST MEATLOAF

Makes 6-8 servings

2 lbs. ground chuck
1 cup coarsely crushed tortilla chips
1/3 cup taco sauce
2 Tbsp. taco seasoning mix
1 egg, lightly beaten
½ cup grated cheese, such as a combination of cheddar and Monterey Jack
Combine all ingredients. Press into loaf pan. Bake at 325 degrees for 1 hour, or until top is brown and loaf shrinks from edges.

I never use bread crumbs or ketchup. My mamma would slap the taste out my mouth.
