angel hair pasta with marinara is really good. Oh, and spaghetti is a type of noodle not really the name of the food. Its spaghetti noodles with marinara sauce. You mean to ask what kind of pasta. 470 SPAGHETTI WITH WHITE CLAM

4 to 8 garlic cloves
4 tbsp. butter
1 c. fresh mushrooms
32 oz. canned minced clams, with juice
1/2 c. fresh parsley, chopped
1/4 c. dry vermouth
1 lb. spaghetti, cooked
Parmesan cheese

Fry the garlic in butter or oil (do not substitute butter or vegetable oil) for a few minutes; add the mushrooms, clams and clam juice. Just before serving, stir in parsley and wine. Toss boiled, drained spaghetti with butter and place on a platter. Pour the sauce over spaghetti and sprinkle generously with cheese. Serves 6.

Vegetarian Bolognese Sauce

2 TB. olive oil
1 medium onion, minced
1 large carrot, minced
1 large celery stalk, minced
3 garlic cloves, minced
2 heaping TB. fresh parsley
1 tsp. dried thyme (i like italian seasoning)
1 oz. dried porcini mushrooms, soaked in 2 cups of warm water until soft (fresh mushrooms can be substituted)
1/4 cup red wine (burgundy or red table wine is good)
16 oz. tomato sauce
1 vegetable bouillon cube
1 bay leaf
Pepper to taste
1 cup Boca crumbles (or other meat substitute)
1/2 cup heavy cream (soy milk can be substituted)
1 tsp. worcestershire sauce
add salt, pepper and tsp. sugar to taste

Heat oil and sauté onions 15-20 minutes until brown. Add carrots and celery, cook 10 minutes.
Add garlic, parsley, and thyme, cook 5 minutes. Remove mushrooms from soaking liquid and chop.
Reserve water. Add mushrooms to vegetable mixture. Add red wine.
Reduce heat to low, stir in tomato paste, mushroom water, bouillon cube, bay leaf, and pepper.
Cover pot and simmer 1 hour. Remove bay leaf. Add Boca crumbles and heat through. Add cream.

I like to either add firm tofu or break up a garden burger patty as the meat substitute. If you like meat add 1/2 pound ground pork and 1/2 pound ground beef.

Cook the pasta according to directions except pull out 2 mins less cooking time. Finish cooking pasta in the sauce for 2 mins. serve with fresh chopped parsley and grated parmesan reggiano.
