I am working with a seal coating business, and we just started our own parking lot striping, and just would like to know the standard parking space dimensions

Go and measure some spaces. Ask the lot owner f they want large if used mostly for trucks or smaller.

The sizes vary according to the use of the parking lot (Range from about 7'-9' wide and 20 ' deep). There are specific dimensions. I suggest checking out this book:
"Time Saver Standards for Landscape Architecture"

I'm surprised an engineer didn't give you plans, and that you are allowed to stripe a parking lot without knowing this basic information.
