Russian Salad: made with potatoes, turnips, carrots, ham, green beans and peas and tossed with mayonnaise.
INGREDIENTS:
1/2 cup cold cooked carrots, diced
1/2 cup cold cooked turnips, diced
1/2 cup cold cooked potatoes, diced
1/2 cup cold cooked green beans, cut into 1-inch pieces
1/3 cup cold cooked peas
1/4 cup mayonnaise
salt and freshly ground black pepper
1/3 cup julienned ham strips
1/3 cup julienned chicken strips (or pickled tongue, if you can find it and like it)
2 hard boiled eggs, sliced
4 rolled anchovy fillets
PREPARATION:
1. Toss the carrots, potatoes, turnips, green beans, and peas together in a bowl.

2. Mix in the mayonnaise and season with salt and pepper.
To serve:
Mound the salad on a serving plate.
Garnish the top with the julienned ham and chicken. Place the 4 rolled anchovies on top. Arrange the sliced eggs around the salad and serve.

RUSSIAN SALAD

1/2 c. pineapple juice
1/2 c. crushed pineapple
1/2 c. Carnation milk
1/2 c. chopped nuts
1/3 c. mayonnaise
3/4 c. diced bananas
1 tsp. lemon juice

Mix over low flame 1 package lime Jello, 1 package cream cheese, 3/4 cup boiling water, and 15 large or 70 small marshmallows. Let cool and pour over above mixture. Put in refrigerator and cool.

Russian Bean Salad

Serving Size : 10

2 small tomatoes -- each cut into 4 wedges
Cooking spray
1/2 teaspoon salt -- divided
1/8 teaspoon pepper
3 tablespoons red wine vinegar
2 tablespoons low-salt chicken broth
2 teaspoons olive oil
1/4 teaspoon Dijon mustard
1 dash sugar
1 garlic clove
1 teaspoon minced fresh cilantro
1 cup diced red onion
1 cup diced yellow bell pepper
1/4 cup minced fresh cilantro
1 (19-ounce) can kidney beans -- drained
1 (19-ounce) can cannellini beans or other white beans -- drained


Preheat oven to 350º.

Place tomato wedges on a baking sheet coated with cooking spray. Lightly
coat tomatoes with cooking spray; sprinkle with 1/4 teaspoon salt and pepper.
Bake at 350º for 1 hour.

Place tomatoes, 1/4 teaspoon salt, vinegar, and next 5 ingredients (vinegar
through garlic) in a blender; process until smooth. Pour into a bowl. Stir in
1 teaspoon cilantro; set aside.

Combine onion, bell pepper, cilantro, and beans in a bowl; stir well. Add
tomato mixture; toss well.

Serving Size: 1/2 cup

Russian Salad as interpreted where I live is mixed frozen vegetables (the kind with cubed potatoes, beans, peas, carrots), cooked and chilled, then dressed with a mayonnaise like regular potato salad. Garnish with roast red pepper strips and hard boiled egg slices if you like that sort of thing, or olive slices.
