My favorite site is allrecipes.com. Allrecipes is nice because it offers very helpful reviews of recipes. I usually don't consider one if it doesn't have 4 or 5 stars. Then I read the review, listing them from "most helpful" first. Often reviewer find ways to improve upon the recipes, and that's the easiest way to find it. Allrecipes is also very easy to search.
I would also try foodtv.com. Anything by Rachel Ray (30 Minute Meals) is very easy!

Summer Gazpacho
1 clove garlic, chopped
½ small red onion, finely chopped
½ red pepper, deseeded and chopped
½ green pepper, deseeded and chopped
1 cup peeled cucumber, deseeded and chopped
3 cups tomato juice
1 tablespoon extra virgin olive oil
1 teaspoon white wine vinegar
½ teaspoon sea salt
¼ teaspoon ground black pepper
Put all ingredients in a food processor or blender and process until smooth. CHILL in the fridge until you're ready to serve. If you like a spicy kick, add a few drops of Tabasco sauce. Top with a dollop of sour cream and a little chopped chive if you want to make it pretty.
**You could use ripe and flavorful fresh tomatoes instead of tomato juice, but you need to skin and deseed them first.
The flavors of gazpacho develop over time, so allow the soup to chill in the fridge for at least 20 minutes, and up to a day ahead.

Here's some tasty snacks I like!
7 Layer Bean Dip
1. 1 can bean dip
2. 1 container guacamole dip
3. combine 1/2 cup mayo, 1 cup sour cream, and 1 package taco seasoning
4. 1 bunch green onions, chopped
5. 2 medium tomatoes, chopped
6. 1 small can diced black olives
7. 1 large bag (2 cups) shredded cheese
Layer in order given in an 8x8 inch dish. Serve with tortilla chips.
Snacky Snack
1 cup sugar
1 cup white syrup
3/4 cup butter or margarine
Mix and boil in small saucepan for 2 1/2 to 3 minutes.
Then Add:
1 box Chex cereal
1 box Golden Grahams cereal
M&M's
slivered almonds
Stir together in large bowl. Don't seal tight.
Chocolate Chip Cheeseball
1 package cream cheese
1/2 cup butter, softened
1/4 tsp. vanilla
3/4 cup powdered sugar
2 T. brown sugar
3/4 cup mini chocolate chips
3/4 cup chopped pecans
Blend cream cheese, butter, and vanilla until fluffy. Gradually add sugars until combined. Stir in chocolate chips. Cover and refrigerate for 2 hours. Shape into a ball and roll in pecans. Serve with chocolate graham crackers.
Creamy Fruit Dip
1 package cream cheese, softened
3 T. orange juice concentrate
1 jar marshmallow creme
Beat cream cheese and orange juice until smooth. Fold in marshmallow creme. Serve with fresh fruit, like strawberries, grapes, canteloups, pineapple, whatever you like!

Try this easy open-face sandwich
Toast a piece of bread, spread a thin layer of mayonnaise on it
add a big thick slice of home grown tomato on it, sprinkled with salt and pepper
add slices of cooked bacon on top of the tomato
cover with slices of velveeta cheese so it covers the whole sandwich
broil in the oven until cheese melts (not too long you will need to watch it carefully so it doesn't catch on fire)
then enjoy one of the best tasting sandwiches you'll ever eat!!!

Busy Day Cobbler
1/3 cup butter
1 cup flour
1/3 cup sugar
2 tsp. baking powder
1/4 tsp. salt
2/3 cup milk
one large can sliced peaches with liquid
1/4 cup additional sugar
1 Tbsp cinnamon
Melt butter in 8 by 11 inch baking dish. In bowl combine flour, 1/3 cup sugar, baking powder, salt and milk. Pour over butter but do not stir. Over this pour sliced peaches (liquid included, but not all of it - I usually leave about 1 inch of liquid in the can, if you pour in all the liquid, it's too much)
Sprinkle peaches with additional sugar and cinnamon. Bake at 350 degrees for 45 minutes. Good served warm with ice cream.

This is not low-cal but disappear from parties by the panful.
You'll need-
lil smokies
bacon (turkey bacon is fine but not as good)
brown sugar
toothpicks
slice bacon strips in thirds
wrap bacon pieces around smokies
skewer onto toothpick
place into baking pan, close together
cover smokies/bacon with brown sugar
bake at 400F until bacon is done and sugar has caramelized.
(line pan with aluminum foil for easier cleanup)

sure, these are really good, really fresh tasting, and really easy...
Lemony Chicken Kabobs
2 T. grated lemon peel
2/3 cup lemon juice
1/2 cup olive oil
2 garlic cloves, minced
2 T. sugar
2 T. vinegar
4 t. salt
1/4 t. ground red pepper
8 skinless, boneless chicken breasts, cubed
1 1/2 lb. small zucchini, sliced
1 lb. medium mushrooms, stems trimmed
Combine first 8 ingredients for the marinade. Pour over chicken and zucchini in a large bowl. Marinade in refrigerator 6-12 hours. Stir occasionally. Add mushrooms 1 hour before cooking. Drain chicken and zucchini and alternate on skewers, chicken, zucchini, mushrooms. Grill over medium heat till chicken tender (about 15 minutes) Brush kebobs with marinade.
Summertime Tomato Salad
2 red beefsteak tomatoes sliced
2 yellow beefsteak tomatoes sliced
2 plum tomatoes sliced
1 pint red teardrop tomatoes cut in half
1 pint yellow teardrop tomatoes cut in half
1/2 C. red onions peeled, julienne cut
3 large leaves basil fresh, cut in thin strips
1/4 lbs. Gorgonzola Cheese crumbled
1 head baby frisee cored and cleaned
1/2 C. Citronette Dressing see recipe below
1/4 C. basil oil see recipe below
salt and pepper to taste
Citron Dressing
1 lemon juiced
1/2 C. extra virgin olive oil
1 t. garlic minced
salt and pepper to taste
Whisk together all the ingredients and set aside.
Basil Oil
2 large leaves basil fresh
1/4 C. extra virgin olive oil
Place ingredients into blender and puree for 15 seconds. Let stand for 30 minutes to extract the basil flavor. Strain through a fine sieve.
Preparation of the Salad
Arrange the salad on a large plate for family style service. Start with the larger beefsteak tomatoes around the edge of the platter. Place the frisee in the center. Arrange the remaining tomatoes around the platter. Arrange the red onions, gorgonzola and fresh basil on top of the salad. Drizzle the citron dressing and the basil oil over the salad. Season with salt and pepper to taste.
Antipasto Pasta Salad
1 lb. penne or tube pasta, cooked
1 green pepper, julienned
15 oz. can garbanzo beans, rinsed & drained
4 oz. Monterey Jack cheese, julienned
4 oz. mozzarella cheese, julienned
4 oz. brick or provolone cheese, julienned
1 bunch green onions, sliced
4 oz. hard salami, thin sliced, julienned
2-1/4 oz. sliced ripe olives, drained
3 oz. thinly sliced pepperoni
1 or 2 Tbsp fresh chives, minced
2 plum tomatoes, sliced and halved
Basil Vinaigrette:
2/3 cup oil
1/3 cup red wine vinegar
3 Tbsp minced fresh basil or 1 Tbsp dried
1 garlic clove, minced
1/4 tsp salt
In a large salad bowl, combine first 12 ingredients.
Combine dressing ingredients in a small bowl Pour over salad; toss to coat.
Cover and refrigerate.
Toss before serving.
No Bake Mock Butterfingers
3 cups corn flakes, crushed
1 cup crunchy peanut butter
1/2 cup sugar
1/2 cup white corn syrup
6 oz. chocolate chips
Heat peanut butter, sugar and corn syrup over low heat to melt. Stir in cereal. Pat into a 8x8 lightly greased pan. Melt chocolate chips and spread over top.
