Frozen are just as good as fresh : )

I stir-fry them or saute or steam them.

Put them in a steamer with the water already boiling for the time period suggested on the instructions. That way they will retain more vitamins. There are some veggies you CAN store for a week or more. They are: carrots, zucchini, broccoli and cauliflower. baby spinach in one of those fresh packs (but not salad), winter squashes, celery (just barely), Chinese snow peas and sometimes sugar snap peas.

I use a steamer inside of a pan-use about an inch of water. Steaming them not only cooks them but it leaves them a little crunchy and most of the nutrients and vitamins are still inside the veggie, rather than the water thats left over.

Steam them in a large gallon pot or equivilent. Use about 3 inches of water in the bottom & cook for about 10 minutes.

Steamed all the way bay- it still keeps most of the firmness of the vegetable and tastes a lot better than boiled- yuck!!

I would steam them just until they are almost
done Atlante you don't want to over cook or make them soft a little crunchy is good .

Boiling and frying are the worst. But, overall, just don't cook them until they're mushy-they should be 'al dente' like pasta.
