Forget "the gift" that's proscribed by tradition. Have a keepsake DVD with a photo montage custom-made for them. Gather photos (and possibly even home movies) of the couple starting with their wedding pics and going to today. Call a company that will create a really special one. Expect to pay $300 or more (divide it up among family members, perhaps... you'll need their help getting the pictures, after all) for a quality product. (Make sure the video producers don't just put the photos on in identically-timed presentations... you want a company that edits the photos to the music and makes it personalized and special!)

The end result will be a DVD with a montage set to music, which will incorporate your photos, movies, scans of documents, or anything else you want (audiovisually, that is). You can make it as long or as short as you want, but for a gift I'd suggest 8-10 minutes... long enough to include 150 or more photos, but short enough that people will enjoy.
