Fried Rice with Ham
Serves 4.
3 large eggs, lightly beaten w/ 2 tsp. waer
2 Tbsp vegetable oil
Coarse salt to taste
4 green onions, thinly sliced diagonally (both white and green parts)
4 garlic cloves, minced
5 oz. ham, thinly sliced and chopped
4 cups cold cooked rice
3 Tbsp. rice vinegar
1 cup frozen peas, thawed
In a large nonstick skillet, heat 1 Tbsp. oil, swirling to coat. Beat eggs, with 2 tsp. water and ½ tsp. coarse salt. Cook in skillet, moving cooked eggs aside gently to allow raw eggs to run in their place, about 2 minutes. Transfer to plate; when cool enough to handle, cut into strips.
In same skillet, heat remaining Tbsp. oil. Add garlic and scallions, heat and stir until fragrant, about 1 minute. Add ham and rice, season with salt, and cook until very hot, stirring often, about 5 minutes. Add vinegar, peas, and eggs, cook until very hot, about 2 minutes.
Sugar Pie's Notes: I usually add a few drops of toasted sesame oil to the veg. oil to add a real authentic flavor and aroma. I"ve also used small shrimp instead of ham; just cook them a little longer that the ham before moving on w/ the recipe.

Hi i find this recipe of fried rice with ham is delicious and usually I top it up with deep fried diced garlic and spring onions when i am done with the cooking..mmmm yummy
and of course u can varied the main ingredients.To replace ham, u can use chicken,beef or shrimps.If u don't like peas,u can leave it out(like i do coz i dun fancy peas hehee) or add other vegs that u like..
INGREDIENTS:
2 eggs
1 tablespoon oyster sauce
2 teaspoons soy sauce
Salt and pepper, to taste
1/2 onion
8 ounces cooked ham
1 green onion, washed
6 tablespoons oil for frying, or as needed
1/2 cup peas, fresh, canned or frozen
4 cups cold cooked rice
PREPARATION:
Lightly beat the eggs. Stir in 1/2 teaspoon each of the oyster sauce and soy sauce. Add a bit of salt and pepper to taste. Set aside.
Peel and dice the onion. Dice the ham and green onion.
Heat a wok or frying pan on medium-high to high heat
When the oil is hot, add 2 tablespoons oil. Add the eggs. Scramble lightly and remove from the pan. Clean out the pan.
Heat 2 tablespoons oil in the pan or wok. When the oil is hot, add the onion. Stir-fry briefly, then add the ham and the green peas. Stir-fry and remove from the pan. Clean out the pan.
Heat 2 tablespoons oil in the wok. Reduce the heat to medium and add the rice, stirring with chopsticks to break up the clumps. Stir in the remainder of the soy sauce and oyster sauce. Season with salt and pepper if desired.
Add the cooked meat and vegetables back into the pan. Stir in the scrambled egg. Heat through and stir in the green onion. Serve hot.

This is my personal recipe - I have a T-Fal wok that works great with this:
4 C. cooked and cooled long grain rice (I use Minute Rice)
2 eggs
1 Tbsp. soy sauce
1 tsp. salt
garlic powder to taste
Beat the eggs, soy sauce,salt and garlic powder together and set aside.
Put some oil in a wok or deep skilet to coat the bottom - not too much. When the oil is hot enough (test it with a few grains of rice), add the rice and toss to coat it in the oil.
Add the egg and toss to coat this rice. Keep stirring the rice until the rice no longer looks shiny and wet - this will tell you that it's done.
I usually make it with cooked shredded chicken and add it right before the egg, and right before serving I add a can of drained peas and stir them in to heat them through. If you are going to make it with shrimp or vegetables, I'd cook the shrimp or veggies first and add them at the end.

STIR-FRIED RICE WITH PORK
1/2 cup green onion, sliced
1/2 cup celery, diagonally sliced
2 cups pork roast, diced
1 tablespoon fresh garlic, finely minced
2 tablespoons oil
3 cups cooked rice, cold
1 cup water chestnuts, canned, sliced
1/8 teaspoon pepper
1/4 teaspoon salt (or hot salt)
1 egg, slightly beaten
pinch of hot pepper flakes or cayenne, to taste
2-3 tablespoons soy sauce
Sauté onions, celery, and pork in oil until vegetables are tender crisp.
Add rice and water chestnuts. Combine pepper, salt, egg and soy sauce.
Stir into rice mixture. Cook, stirring 2 to 3 minutes or until heated.
Variations:
#1 Add cooked cocktail shrimp during last 5 minutes of cooking.
#2 Stir in 1 small can or 1 cup fresh bean sprouts during last 10 minutes of cooking.
#3 Add 1 1/2 cups snow peas or sugar snap peas; sauté with green onions.
#4 1/8 cup finely minced fresh ginger added and a tablespoon of lemon juice adds a fresh new twist. Serve over cooked Thai noodles.
Makes 6 servings.

Here is what you need:
1 tablespoon soy sauce PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
1 teaspoon soy sauce
2 teaspoons sugar
2 teaspoons cornstarch
Pinch salt and black pepper
1 pound pork ,chicken or turkey -- thinly sliced
2 tablespoons oil -- divided
2 large eggs -- beaten
1 bunch green onions -- chopped
1 cup cooked white rice -- chilled
Here is how to make it:
Combine 1 tablespoon soy sauce, sugar, cornstarch, and salt and pepper in medium bowl. Stir in meat.
Let stand for 20 minutes at room temperature or up to 24 hours covered and chilled. Heat 1 tablespoon oil in wok or large skillet over high heat until very hot. Pour eggs over bottom of wok. Cook as for pancake until fairly firm. Remove and set aside.
When cool cut into thin strips. Add remaining tablespoon oil to wok. Heat over high heat until very hot. Add marinated meat. Stir-fry until opaque. Add green onions. Cook for 1 minute. Add rice and remaining soy sauce. Heat through.

Fried Rice Restaurant Style
INGREDIENTS:
* 2 cups enriched white rice
* 4 cups water
* 2/3 cup chopped baby carrots
* 1/2 cup frozen green peas
* 2 tablespoons vegetable oil
* 2 eggs
* soy sauce to taste
* sesame oil, to taste (optional)
DIRECTIONS:
1. In a saucepan, combine rice and water. Bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
2. In a small saucepan, boil carrots in water about 3 to 5 minutes. Drop peas into boiling water, and drain.
3. Heat wok over high heat. Pour in oil, then stir in carrots and peas; cook about 30 seconds. Crack in eggs, stirring quickly to scramble eggs with vegetables. Stir in cooked rice. Shake in soy sauce, and toss rice to coat. Drizzle with sesame oil, and toss again.
Fried Rice with Cilantro
INGREDIENTS:
* 4 tablespoons vegetable oil
* 5 cloves garlic, finely chopped
* 2 green chilies, diced
* 2 cups cubed skinless, boneless chicken breast meat
* 2 cups cooked jasmine rice, chilled
* 1 tablespoon white sugar
* 1 tablespoon fish sauce
* 1 tablespoon soy sauce
* 2 teaspoons chopped green onion
* 2 tablespoons chopped fresh basil leaves
* 5 tablespoons chopped fresh cilantro
DIRECTIONS:
1. Heat the oil in a wok or large skillet, over medium-high heat. Fry the garlic until golden, then add the chili pepper and chicken meat, and stir-fry until cooked through.
2. When the chicken is cooked, add the rice, sugar, fish sauce, and soy sauce. Cook over medium heat, stirring gently. When the mixture is well blended, stir in the green onions, basil, and cilantro. Cook for 1 more minute, then serve hot.
