I am making a cake for a diabetic and am planning to substitute Splenda for the sugar. However, most "from scratch" recipes include milk which contains a bit of sugar. Any recipe would be appreciated. Please don't answer with search milk-free white cake recipe on yahoo or google. That is no help...I have already done that. However you can look on search engines for recipes if you want to. Thank you!

The tiny bit of lactose in the milk in any recipe is hardly enough to cause a diabetic to go into hyperglycemia. Rather, comsuming too much of hte cake overall would do it before what little milk and eating a normal serving would cause.

You can just sub water for milk in recipes.
