Here's a tasty recipe my family really likes!
Breaded Ranch Chicken
3/4 cup crushed cornflakes
3/4 cup grated parmesan cheese
1 envelope Ranch salad dressing mix
2 pounds boneless skinless chicken breasts
1/2 cup melted butter or margarine
In a shallow bowl, combine the cornflakes, parmesan cheese, and salad dressing mix. Dip chicken in butter, then roll in cornflake mixture to coat. Place in a greased 9x13 inch baking dish and bake uncovered at 350 for 45 minutes.
Throw some potatoes in the oven before you start making this and they should be done when the chicken is! Then serve with a green salad. Yum.

EGGPLANT PARMESAN
1 large eggplant
10-12 medium sized mushrooms (sliced)
pasta sauce (no added vegetables; plain)
1/2 lb. mozzarella cheese (shredded)
Italian bread crumbs
vegetable oil
3 eggs
salt (optional)
Slice the eggplant about 1/2 inch thick. Throw away both ends of eggplant; don't eat.
Beat the eggs together in a flat bowl (cereal bowl; salad plate). Use another bowl (same type) and fill about 1/4 inch with breadcrumbs.
Cover a slice of the eggplant, one at a time, with the egg and let excess drip off. Then lay the slice in the breadcrumbs, covering both sides. Repeat this process, adding more breadcrumbs as needed. If you fill the bowl with too many crumbs at on time, the crumbs will get sticky and chunky.
Add oil to a medium fry pan, but just enough to coat the bottom. Brown each slice; you can brown about 4-5 slices at a time. Don't overcook; just let them get crispy on the outside. Add oil as necessary; don't let the pan dry out or burn.
Transfer slices to a paper towel. Once all are browned, place a layer in the bottom of a rectangular casserole dish (approx. 9-11 inch dish). Top with half of a jar of sauce. Add the sliced mushrooms and a couple hand fulls of cheese. Add another layer of eggplant and the rest of the sauce. Cover with foil and put in a 375 degree oven for 15 minutes (oven temps vary). Add another couple hand fulls of cheese and bake uncovered for about 8-10 minutes .

i made this the other day, everyone loved it-Cheeseburger Meatloaf(got it off tv's Paula Dean show) 1 1/2 ground beef, 1/2 cup sour cream, 1/4 t worchestershire sauce, 1/2 cup chedder cheese, 1cup cracker crumbs. mix all together and put into a pan with 2 slices of bread on bottom(soaks up the grease) cook about an hour at 350 Sauce- 1 can cream of mushroom soup, 1 1/2 cup chedder cheese. bring to a boil and pour over meatloaf. mmmm good stuff!!!! and very easy! it called for onions but i hate them too.

Cheesy Chicken Pot Pie
1 1/2 cups chicken stock
1 cup cooked, shredded chicken meat
3/4 cup green peas
1/3 cup diced celery
1/3 cup diced carrots
1 1/2 cups shredded Cheddar cheese
2 tablespoons cornstarch
1/4 cup milk
1 recipe pastry for a 9 inch double crust pie
In a medium saucepan combine the stock, chicken, peas, celery and carrots. Bring to a boil. Mix cornstarch with milk and stir into stock mixture. Cook stirring constantly for 5 minutes. Remove from heat and let cool for 1 hour. Preheat oven to 325 degrees F (175 degrees C). Stir cheese into filling mixture and pour into a 9 inch pie crust. Top with second crust, seal edges and cut slits in top crust. Place on a cookie sheet and bake for 35 to 40 minutes or until top crust is golden brown.

Order a Chinese takeaway & ask them not to put onions in.
Chicken & kashew nuts/duck in orange sause/beef cantanese stile washed down with a bottle of cabernate savinyone. Boy I am hungry now I will order that one strait away, By the way thats for two people.

Courgette &Tomatoe Bake
Saute courgettes and garlic
Peel and slice tomatoes add oregan and bay leaf
Chopped celery
Grated paramazan cheese and mix any other cheese of your choice.
Bake in oven for 30min.
Serve with boiled new potatoe or a baked.
And crusty bread .
Enjoy.

how about philly sandwiches. I use chicken, mushrooms and cheese in a bread roll with steak fries. My husbands likes flank steak with bell peppers and cheese. Easy and filling
