I want something simple. I have a crockpot, roaster, or I can bake or broil it.

I've seen a couple of recipes that call for liquid smoke. What is it and where do I buy it?

BBQ BEEF BRISKET

3 oz. bottle liquid smoke
5 to 6 lb. beef brisket
1 bottle "Cooks BBQ sauce"
Celery salt
Onion salt
Garlic salt
Salt and pepper
Meat tenderizer (optional)
Worcestershire sauce

Pour liquid smoke over brisket and rub on all sides. Sprinkle with celery salt, garlic salt, onion salt and meat tenderizer. Place brisket in refrigerator covered with foil. Leave overnight. When ready to bake, sprinkle both sides of beef with salt, pepper and a little Worcestershire sauce. Bake covered 5 hours in 275 oven. Uncover meat and pour about 1/2 bottle BBQ sauce over it and continue baking 1 hour uncovered. Remove meat; remove fat from juices. Add flour to thicken the juice. Then add more BBQ sauce, if desired. Serve with the sliced brisket. Allow brisket to cool before slicing; slice thin across the grain. Slices may be reheated when ready to serve or wrapped and frozen.

BEEF BRISKET BAKE

2 to 2 1/2 lb. beef brisket
1/2 can mushroom soup
Splash red wine
2 tbsp. Lipton onion soup mix

Wrap brisket with soup, wine mixture in heavy aluminum foil. Place it in a Pyrex baking dish. Be sure to completely seal the foil around the beef as this makes it very tender. Bake at 150 degrees for 24 hours.

BBQ Brisket

Marinate brisket overnight with 1 bottle of Liquid Smoke with a little seasoned salt added.

Bake at 250 degrees (covered).
Cool and slice.

Pour a whole bottle of your favorite BBQ sauce over it and bake for another hour, covered. (You can uncover it for the last 15 minutes of baking)

This is a real crowd pleaser!

Liquid smoke is usually found near the barbeque sauces. It does lend a wonderful smokey flavor to meat.
