Here's my Mom's recipe. She makes the tastiest lasagne in the world.
Lasagne
1 lb. ground beef, browned with chopped onion
1 6 oz. can tomato paste
1 8 oz. can tomato sauce
2 14 oz. cans diced or crushed tomatoes
1/4 tsp. pepper
1 1/2 tsp. garlic salt
1 1/2 tsp. dried parsley
1 1/2 tsp. oregano flakes
2 large bay leaves, crushed
Simmer all ingredients for 1 hour.
Cook 8 oz. lasagne noodles according to package instructions.
16 oz. mozzeralla cheese
10 oz. cheddar cheese
12 oz. cottage cheese or ricotta cheese
shredded parmesan cheese
Layer in greased 9x13 inch pan:
sauce
noodles
sauce
cottage or ricotta cheese
mozzerella cheese
cheddar cheese
parmesan cheese
Repeat layers
Bake at 350 for 45 minutes. YUM.

Here's another one I got from my best friend's graduation party. It's a vegetarian version and really really good. You could always throw in some cooked diced chicken or even some hamburger if you want!
Veggie Lasagne
1 package no-bake lasagne noodles
ricotta cheese
2 14 oz cans herb-flavored diced tomatoes (whatever you like)
2 cloves garlic, minced
1 medium onion, chopped
1 package fresh mushrooms
1 yellow squash
1 zucchini
1 box frozen spinach, cooked and drained
a crap-load of cheese, mozzerella, cheddar, marble, whatever!
parmesan cheese
Saute garlic and onion in large skillet. Add mushrooms, squash, and zucchini and cook until tender. Add tomatoes and allow to simmer a few minutes. In a greased 9x13 pan, begin layering. First a layer of sauce, spinach, ricotta cheese and salt and pepper, cheese of choice and some parmesan. Cover with no-bake noodles that have been dipped in water. Do it all again. After the second layer of noodles, repeat layering minus the noodles. Cover and bake in a 350 oven for about 50 minutes. Uncover and bake until top is bubbly and brown.

These are both REALLY good recipes and I promise that if you try them you will love them! Happy cooking!

Start with some decent minced beef. Brown it to get rid of any un-wanted fat, then drain it off and chuck in some sliced mushrooms and pour on a spicy sauce. That could be any pasta sauce you prefer. Layer it into a suitable dish with lasagne leaves and finish off with loads of creamy white sauce. Cover with grated cheese and bung into an oven pre-heated to around 180 c until it looks done.

Delicious! You can send me some if you like.

PS, Lasagna sounds like it is a typical American assassination of how words are supposed to be spelt. That's how the Italians spell it. (Where lasagne was invented!!!)

EASY LASAGNA

1 lb. ground beef
3 1/2 c. (32 oz.) thick spaghetti sauce
1 1/2 c. water
2 c. (15 oz.) Ricotta cheese
3 c. (15 oz.) shredded Mozzarella
1/2 c. grated Parmesan cheese
2 eggs
1/4 tsp. salt
1/4 tsp. pepper
8 oz. lasagna, uncooked

Brown beef in 3-quart saucepan; drain off excess fat. Add sauce and water; simmer about 10 minutes. Combine remaining ingredients, except lasagna, for filling. Pour about 1 cup sauce on bottom of 9x13x2-inch baking pan.
Layer 3 pieces of uncooked lasagna over sauce; cover with about 1 1/2 cups sauce. Spread half of cheese filling over sauce. Repeat layers of lasagna, sauce and cheese filling. Top with layer of lasagna and remaining sauce. Cover with aluminum foil and bake at 350 degrees for 50-60 minutes. Remove foil; bake about 10 minutes longer. Allow to stand 10 minutes before cutting.

Yes, depending on size of family - here is what I use. Feed family of 4-6.
1 pkg lasagna noodles
1-2 lbs meat
2 jars spaghetti/ pasta sauce
1 frozen package of spinach (optional)
cottage cheese or ricotta cheese
Grated Parmesan or Romano cheese
Mozarella cheese shredded
salt and pepper to taste
1 tbsp basil leaves
1 tbsp italian seasoning.

In a skillet, brown the ground beef over medium-high heat. Add onion, salt, pepper, and Italian seasoning. Cook until there is no remaining pink color in beef. Drain any liquids. Then prepare meat mixture by adding one jar of the spaghetti sauce to the seasoned ground beef and basil leaves. Set aside

In a large bowl, mix together (cottage cheese or ricotta cheese), Romano cheese, and spinach. Mix until well blended. Set aside. Preheat oven to 375 degrees F

- Add a thin layer of spaghetti sauce in the bottom of a 9x13 inch baking dish.
- Add a layer of noodles lengthwise and a few noodles in the opposite direction.
- Add a layer of meat mixture on top of noodles
- Pour in a generous layer of ricotta mixture on top of meat
- Spread a layer of mozzarella cheese
- Add another layer of noodles lengthwise.
Repeat layers
Remining Sauce mixture on top with remaining 1/2 cup mozzarella cheese.

Bake in a preheated oven for 50 to 55 minutes. If Mozzarella cheese becomes too browned, loosely cover with a piece of foil.
